Keto Sugar Cookies

Easily the best keto sugar cookies you will ever make. This recipe produces sturdy but tender cookies, perfect for decorating with sugar-free royal icing.

• Almond flour • Coconut flour • Salt • Butter • Swerve Sweetener  • Egg • Vanilla extract

Whisk together flours and salt. Beat butter and sweetener until creamy. Beat in egg and vanilla. Add flours and salt and beat until dough comes together.


Turn dough out on a silicone mat. Pat into a rough circle and top with parchment paper. Roll out to about ⅓-inch thickness.


Cut out cookies and lift carefully with an offset spatula. Place cookies on baking sheets lined with parchment or silicone mat and freeze for 30 minutes.


Once chilled, bake at 325F for 12 minutes or until edges start to  brown, rotating pans halfway thru baking. Let cookies cool on the baking sheet.


Whisk sweeteners and egg white powder. Add water, 1 TBS at a time, until desired consistency. Whisk in vanilla and food coloring.


Decorate cookies, as desired.


Top with my homemade sugar-free sprinkles!
