Mexican Shredded Beef

This Mexican Shredded Beef brings the whole family to the table with joy. With tender pulled beef in a rich, flavorful sauce, this meal practically cooks itself!

• Chuck roast • Salt and pepper • Avocado oil or     other oil • Diced tomatoes • Liquid smoke • Garlic • Ground cumin • Chipotle or chile    powder

Preheat oven to 300°F. Season the roast liberally with salt and pepper.

In a large Dutch oven, brown the roast in hot oil on all sides. Stir in diced tomatoes, water, liquid smoke, garlic, cumin, and chipotle powder.

Bring to a simmer then cover and transfer pot to the oven. Cook until it is tender and can be shredded, about 5 hours.

Use two forks to shred the meat. Toss the meat in the juices that have collected at the bottom of the pot.
