Creating dairy-free desserts
This ebook was several years in the making. I played around with dairy-free ingredients in many of my published cookbooks, including Easy Keto Desserts and The Ultimate Guide to Keto Baking, so I felt I had some experience.
Then I decided to go at it full tilt and devote a whole book to the subject. Converting standard recipes to dairy-free isn’t as easy as you might think.
In some cases, it’s a matter of a few simple substitutions. But in others, it was far more tricky. Dairy-free ingredients don’t always behave the same way and I was in for a few surprises.
I learned a whole lot creating this book, let me tell you! But I am thrilled with the results.
Professional design
Because I wanted a truly useful dairy-free cookbook, I hired a designer to help me with this one. I have no real graphic design experience, and proper page layout was very important to me.
So you will notice that this is longer than many of my other e-cookbooks. She really did a wonderful job, working with me to make it both clear and easy to read, as well as enticing to look at.

I really think you will! The recipes are delicious and most of us can use a little less dairy in our keto diets as it is. I truly enjoyed creating these recipes and found myself surprised at how good they were.
Easy Dairy-Free Keto Desserts is only available as an ebook and I have no plans to convert to hardcopy any time soon. That said, it’s a PDF so you can easily take it to a printer and have them create a hard copy for you.
Right now, it’s only available as a PDF. However, I may try to upload it to Kindle Publishing soon. I just have to find time to figure that part out!

Well, I just bought your ebook, and very much look forward to using it, both for myself (I’m not dairy-free) and others in my life who can’t do dairy.
My only disappointment is the lack of metric measurements, as baking is a much less forgiving endeavour than general cooking. Measure up five 1 cup measures of almond flour, and they’ll all be different weights, whereas 100g. will always be 100g. Since I started baking with metric measures, I have much more baking success. And kitchen scales are cheap and widely available these days. Perhaps when you have some free time (HA!) this could be added to another edition of the ebook ….

If you have my big baking book, it has a full metric conversion chart at the back. But the only ingredient that really needs to be weighed is the flour. In my own experiments, I’ve found that 1 cup almond flour = about 100 to 105g (that little extra bit won’t make much of a difference), and coconut flour is 110 to 115g per cup.

Hi, Carolyn — This looks great! I used to use your cookbooks and website all the time but have developed a coconut intolerance / sensitivity (as well as allergies now to most nuts, eggs, and dairy). Can you give me an idea of how many of the recipes here use coconut cream/milk/flour? Any chance any are nut/seed free too? Thanks.

I’m so thrilled! A good friend of mine has recently discovered that she has to avoid dairy products, which makes keto a bit challenging. That said, I myself don’t have any issues with dairy — so when I’m not baking something to share with my lactose-intolerant friend, would it be okay replace coconut cream (which is crazy expense on this side of the border) with unwhipped whipping cream? And likewise full-fat coconut milk?

Your new book looks great! Any chance you might do one that is both dairy and egg free? I don’t know how much of a market there is, but it is really hard for us to find recipes. The commercial egg replacements sort of work if a recipe only has one egg, but even so you can’t do anything like a custard. (I also don’t use flax, which is problematic for other reasons.)

Just so you know, I have not become a vegan or vegetarian, but I am now allergic to dairy and eggs when they didn’t used to be a problem. That’s a pretty specific niche. Eggs are the hardest thing to replace. I’ve used gelatin, extra oil, applesauce, chia, and some of the the commercial egg subs, but am still experimenting.
