Keto Banana Pudding for Two

This creamy keto banana pudding is a taste sensation! This easy low carb dessert gives the Southern classic a run for its money.

I have to admit, I never really considered banana pudding all that interesting. You know I am a chocolate lover through and through, so I often pass over other flavors, thinking they just won’t live up to the promise.

Until I got it in my head to make a keto-friendly banana pudding. And suddenly I understood the appeal: creamy and rich, with that unmistakable banana flavor. It’s a nice palate cleanser for this diehard chocolate lover!

This recipe for keto banana pudding serves only two people. And I am posting it today because I have a bit of an announcement to make:

Okay, so back to the recipe at hand, because I’ve become a believer. Banana pudding can be quite a delicious treat, and it’s really easy to make a keto-friendly version.

And if you’re missing the vanilla wafers that are often paired with this Southern classic, I cannot recommend the HighKey Mini Cookies enough. I used the snickerdoodle cookies. But you know what would also be tasty? Their new peanut butter mini cookies!

How to make Keto Banana Pudding

This is an easy no-bake recipe, and something you can whip up in 25 minutes. Don’t forget the chilling time, though! Pudding is best when chilled.

Here are my best tips for getting it right:

  1. Use a combination heavy whipping cream and some unsweetened almond or hemp milk for a thick and rich pudding. You could do all whipping cream but it’s adds calories and fat, and can make it overly rich.
  2. Whisk the sweetener right into the egg yolks. It will make them quite thick but they will thin out as you add the hot cream mixture.
  3. Only whisk in about half of the hot cream, slowly drizzling it in as you continue to whisk. This is a process called “tempering”, which allows the egg yolks to come up to temperature without cooking or curdling. Don’t skip this step, it’s extremely important!
  4. Once the cream and egg yolk mixture it well combined, you slowly whisk this back into the cream that’s remaining in the pan. And you continue to stay by it and whisk almost constantly, until it thickens up.
  5. Because this is just for two, it’s a very small amount and can thicken up suddenly. DO NOT WALK AWAY AT ANY TIME! The minute it thickens, remove it from heat.
  6. How do you know it’s thick enough? You will notice that your whisk begins to leave trails through the mixture – rather than moving through a liquid, it’s moving through something that’s more like custard.
  7. Once the pudding is off heat, add the butter and let it melt a few minutes. Then whisk in the butter, banana extract, and vanilla extract.
  8. Xanthan gum or glucomannan is required here for the correct consistency. Whisk it in quickly to avoid lumps. I like to whisk as I am sprinkling it over the surface.

Can you make keto banana pudding for more than two people?

You bet! You can easily double or even triple the recipe, although it will take a bit longer to cook.

Ingredients

  • 6 tbsp heavy whipping cream
  • 1/4 cup unsweetened almond (or hemp milk for nut-free)
  • 2 large egg yolks
  • 2 1/2 tbsp powdered Swerve Sweetener
  • Pinch salt
  • 1 tbsp butter
  • 3/4 tsp banana extract
  • 1/4 tsp vanilla extract
  • 1/8 tsp xanthan gum or glucomannan
  • 2 mini HighKey Snickerdoodle Cookies (optional)

Instructions

  • In a medium saucepan over medium heat, combine the whipping cream and almond milk. Bring to just a simmer. In a medium bowl, whisk the egg yolks with the sweetener and salt until well combined.
  • Slowly whisk about half of the hot cream mixture into the yolks, whisking continuously. Then slowly whisk the yolk/cream mixture back into the saucepan and cook until thickened, 4 to 5 more minutes, whisking continuously.
  • Remove from heat and whisk in the butter and the extracts. Sprinkle the surface with xanthan gum or glucomannan and whisk vigorously to combine.
  • Divide between two small dessert cups and refrigerate 1 hour. Top with lightly sweetened whipped cream, if desired.
  • Add a few mini HighKey Snickerdoodle cookies and a slice of banana for presentation!

    I substituted monk fruit sweetener (only 1/2 tablespoon) for the swerve and the carb count went down to 0.9 gms per serve.

    This pudding sounds delish and is forcing me to get off the fence and finally splurge on some Olive Nation banana extract, which is crazy expensive here in Canada.

    I’ve tried similar recipes to this – specifically recipes that call for the banana extract to be mixed in at the end off heat – and I’ve used the Olive Nation banana extract, but I always taste alcohol when I do it this way. Do you notice this taste? Am I just super sensitive to it? I’m not sure how to work around it. I love banana pudding something serious, but the alcohol taste is sooooo strong!

      I certainly didn’t, and neither did my family. I am wondering if you got a bad batch or you’re just really sensitive to it. Whichever the case, you may want to check out some of the artificial banana flavourings instead.

    Now that I have the “good” banana extract, I’m excited to tackle more keto banana recipes! Since I have both, which thickener do you prefer in this particular recipe…xanthan gum or glucomannan? (And how exactly do you decide which to use when creating a recipe? I actually don’t know how they differ other than your mentioning once or twice that xanthan gum can create a slimy texture. Thanks for any enlightenment you can provide.)

      I prefer glucomannan in recipes like this. I use xanthan gum in other recipes because it helps prevent recrystallization in things like caramel sauce and ice cream.

    Tried making and it seperated and egg yokes curdles was on low heat 🥺😭what can I do next time?? Wont try again as I had doubled the recipe now trowing it away😥

      Quick, get it into a blender and blend. Will still be great! Sounds like your pan is not great quality, if it curdled. Or your stove is too strong. One tip: Always match the size of your pan to the size of your element. So if it’s a small saucepan as suggested for this recipe, put it on the smallest element. Larger elements send heat up the sides of the pan so things heat up too much on the sides.

    Oh my goodness this is so delish! Even my husband Mr. Non-Keto loved it. What’s not to love about Carolyn’s recipes!!!
    I was short an ingredient so I had to change the almond milk. I used coconut cream.
    BONUS: I had baked Carolyn’s Cinnamon Crunch Cereal and served a chunk with the pudding. That was like eating pie crust and took me back to a childhood memory.
    Carolyn, I am so thankful to God they He gave you this Amazing Wisdom to bake and cook, AND know the different types of sugars (Swerve, Erythritol, BocaSweet) etc., to use for which recipes!
