Mini Pecan Tarts and Wellness Your Way

My local Kroger store is Fred Meyer, and I love their in-house Simple Truth brand. It offers competitive prices on a great many healthy and organic food items and natural household items. And with the digital coupons, I found I could load up on some of my go-to ingredients: grassfed beef, organic cheese, nuts, chicken, coconut oil, eggs, etc. There are also quite a number of other brands in the digital coupons, ones that we low carbers use frequently (Silk and So Delicious, among others). So if you have a Kroger store near you, this is definitely a cost-saving measure! (Participating stores include: Kroger, Fred Meyer, Fry’s Food Stores, QFC, King Soopers, Ralphs, Smith’s, Dillons, Bakers, Gerbes).

I’ve been doing this healthy low carb thing for quite some time now, and my trick is to still include sweets and treats, provided that they fit the low carb lifestyle. There something about that little taste of dessert that caps off my day and makes me feel satiated. So with some of my Fred Meyer goodies, I set about making over a classic, Pecan Tassies, into something I could eat and feel good about. Until recently, I had no idea what tassies were. Really they are just kind of little pecan tart that uses cream cheese in the crust. I have a longstanding love affair with pecan tarts and pies, so making a healthier sugar-free version was just what the doctor ordered.

Ingredients
Crust:
  • 2 cups almond flour
  • 1/3 cup powdered Swerve Sweetener
  • 1/2 tsp salt
  • 6 tbsp butter melted
  • 3 ounces cream cheese cut into chunks
Filling:
  • 1/2 cup chopped toasted pecans
  • 1/4 cup butter
  • 1/3 cup powdered Swerve Sweetener
  • 1 tsp Yacon syrup or blackstrap molasses
  • 2 tbsp Sukrin fiber syrup (optional, helps with gooeyness)
  • 1 tsp vanilla extract
  • 2 tbsp whipping cream
  • 1 egg
  • 1/4 tsp salt
  • 24 pecan halves
Instructions
Crust:
  1. Preheat oven to 325F.
  2. In a large bowl, whisk together the almond flour, sweetener, and salt. Stir in the melted butter. Add the cream cheese and cut in with a sharp knife or pastry cutter until the dough looks unified and comes together easily.
  3. Roll the dough into 24 balls and press into the bottom and up the sides of a mini muffin pan (if your pan is not very non-stick, you may want to grease it first). Bake 10 minutes.
Filling:
  1. Fill the tart crusts with about 1 teaspoon of chopped pecans.
  2. In a small saucepan, melt the butter over low heat. Once melted, stir in the sweetener, Yacon syrup, fiber syrup, vanilla extract, and whipping cream until well combined.
  3. Whisk in the egg and salt. Divide mixture evenly among tarts. Top each with a pecan half and bake another 15 minutes.
  4. Let cool 15 minutes before removing from the pan.

    My Kroger is also Fred Meyer.
    My favorite local place to shop for simple truth products, organic fresh vegetables, bobs red mill, products , and organic heavy whipping cream!

    I buy Simple Truth products all of the time. I also shop their natural food aisles. I can get the majority of my organic and gluten free items at Kroger with only occasional trips to the local natural store. I will definitely check out the digital coupons.

      I love my Smiths store on Rainbow here in Las Vegas. I buy so many Simple Truth products. Eggs butter milk fresh spinach mushrooms salad packages chicken chicken and more chicken feta cheese ice cream almond butter coconut flour. Never fails me!

    I love pecan pie, so this recipe looks great. I do have a couple of questions, however. Since you have Erythritol in the mix, can I deduct the sugar alcohol grams from the carbs along with the fiber grams? If so, there should be NO carbs in the Net Count, right? Also, can I substitute sugar-free maple syrup for the Sukrin fiber syrup? I just recently found your site and look forward to trying your recipes. Thank you for all the hard work you put into sharing them!

      No, the net carbs has already subtracted out the fiber and the erythritol. I don’t add erythritol carbs in anyway, I just list them for people’s knowledge.

    My local Kroger stores are King Soopers. When I run out of the organic eggs that I get at Costco, I can always run up the street to my King Soopers and buy their Simple Truth eggs, knowing that the chickens are treated well, and run around cage free. It is getting so much easier to eat low carb and paleo than it use to be, thank you King Soopers for carrying an ever expanding selection of organic items.     Omg omg omg! Thank you, thank you, thamk you! Pecan Tassies are my faaaaaaaavorite!.. and the main reason I gained 5lbs this Christmas 🙁 I never even dreamed they could be made low carb. I will love you forever if they’re even remotely close to the real thing!!! I don’t know what Krogers we have, if any here in Connecticut but I’ll be sure to look into it 🙂

    Unfortunately I don’t think we can buy neither Yacon syrup nor blackstrap molasses where I live (or online). What does it bring to the flavor profile or texture that the fiber syrup doesn’t provide?

      It gives is more caramel flavour and colour. But it would be just fine if all you have is the fiber syrup. Especially the golden one.

      Amazon has it. I did some research on Yacon and ordered a bottle last night. Read the comments to decide which one you prefer.

    A couple of questions: Can you make the crust in a food processor instead of cutting in by hand, did you use the gold or clear sukrin syrup, and did you find the syrup affected your blood sugars(sukrin’s website warns that this can happen in some individuals)? These are one of my favorite high carb desserts so would love to try a low carb version. How do these and your butter tarts compare? They seem similar. Thanks for all you do.

      I am sure you could use a food processor, I used the Gold (it’s linked in the recipe) and it’s such a small amount spread over 12 servings that no, I did not find it affected my blood sugar.

        Well, $5.99 a pound in a regular grocery store is quite good. You can get it more inexpensively direct from a farmer but you have to buy in bulk (like buying 1/4 cow) and that requires freezer space!

          We don’t label beef as grass fed or not where I live, so it’s difficult to do a fair comparison. But $5.99/lbs is pretty much exactly what we pay for organic beef, which is pretty close I guess 🙂

    Here in Arizona Krogers is Smiths [or Smiths is Kroger]… at any rate I, too, like these brans [their low carb yogurt, too], and their almond flour is a great price and I find it is as fine as what I’ve been getting from Honeyville. I still buy Honeyville, but I also buy the Simple Truth brand almond flour too…. much finer than Bob’s Redmill which is more expensive.

        I saw that after I posted when I looked closer at the ingredients. After I looked more closely into Yacon I ordered some as I can see the benefits of adding it into my diet. I have the Sukrin Clear and gold, would use gold for this is my guess.

    I LOOOOOOOOVE Kroger! I used to think they were the most expensive store in town (Norfolk, VA), but now I do 99% of my grocery shopping there!!! I buy my almond flour there and it always seems when I need more, they have it on sale! I have gotten quite a few people at work hooked on shopping at Kroger as well…they tell me all the time about how much they save by shopping there now…I am a definite Kroger Girl and am loving that they keep adding more and more products that fit my Low Carb, High Fat lifestyle!!!

    Green giant frozen veggies are a great freshness time saver from Kroger and the Silk Almond is a staple at my house. One of our local Kroger stores is the biggest I have seen anywhere. All freshest produce, deli with cheeses is tremendous. Seafood section is to die for. It’s a mega store.

    Simple Truth Tomato Bisque Soup and Organic Chicken Broth both rule! In all honesty, Simple Truth, Private Selection and the Kroger Branded products are all high quality. I prefer these brands over the name brands. Smith’s is our family’s go to market!

    I will definately have to try this recipe, as I surely miss pecan pie on this WOE. Out west here, we have Smith’s, which we shop at weekly (or more). Love all the low carb choices they have and the Simple Truth line of products we love, don’t have to worry about added ingredients! Always fresh produce, friendly employees and great selections & prices!

    I shop at Kroger where I live. I love the free Friday items and the digital coupons. I buy my jicama sliced there quite often. They run great sales on Kroger brand dairy & cheese. I stocked up on several things during Taste of Italy. Thanks to you and Kroger for the give away

    My Fred Meyer did a big remodel and added a huge produce and natural section. I like the bulk isle for unsweetened coconut because they have three different types of shred. I also like the Simple brand and look for it for many products. I am going to try their grass fed meats. My grand kids love Fred Meyer because they can have an orange or banana as a treat, such a nice change from a sugar cookie!

      I always use real Swerve, as the generics are not very good. Keep an eye out for sales and stock up! They often have sales in the stores and online

    My crust turned too dark around the edges. What do you suggest for that? Mine turned out dry. I did not add the optional ingredient. Do you think adding that would help with the dryness?

      It’s clear you overcooked it… remember every oven is different. And yes, the optional ingredients are suggested for best results.

      Either works, although I don’t really use them at all anymore as they spike my blood sugar a bit.
