Ring in the New Year with these delicious low carb cocktails! Creamy frozen raspberry puree and champagne to kick off a healthy 2017.
Confession: I have not made it to midnight on New Year’s Eve in over a decade. I’ve always been an early to bed, early to rise kind of girl, (and although it does seem quite healthy, I am not sure it’s made me wealthy or wise). Once I hit my 30s and had kids, staying up for the change of the year didn’t seem worth it. I would pay too much the next day in the form of exhaustion. Really, though, I don’t mind much. It seems no great loss to just sleep through the end of the year and wake up refreshed in a brand new one.
That doesn’t mean, however, that I don’t enjoy a good party to ring it in. I just want that party to start by 6pm and end by 9pm so I can get home and snuggle into my warm bed. And now that I live on the West Coast, I can tell myself that I did indeed stay up to midnight…Eastern time. I can watch the ball drop and say “Happy New Year!” and kiss my husband and kids. And then I can snuggle into my warm bed.
This year, we are going to a friend’s house. They too have young children and will likely be kicking us out in good time. I have been told I must bring my Buffalo Chicken Sausage Balls. And I plan on bringing a round of these Raspberry Cream Mimosas as well. They. Are. Divine. The frozen raspberry cream by itself is heavenly, but topped up with champagne or Prosecco? Dreamy low carb cocktails! And if you’d prefer a mocktail, it would be quite tasty with seltzer too.

This really sounds lovely! Can it be frozen for 24-48 hours in advance? Or do you think it would affect the consistency in some way?

Yep it can but you may need to let it thaw a bit to make it scoopable.
