Keto Gingerbread Cookies

Keto Gingerbread Cookies are a classic low carb and sugar-free holiday treat. Crisp and delicious with a gingery bite, they’re perfect for decorating and sharing.

• Almond flour • Swerve Brown • Coconut flour • Ginger • Cinnamon • Baking powder • Salt • Cloves • Eggs • Coconut oil • Vanilla

Whisk together flours, spices, sweetener and  baking powder. Stir in eggs, coconut oil, and vanilla extract until the dough comes together.


Divide dough in half and turn out onto a piece of parchment paper. Top with another piece of parchment and roll out out about ¼ inch thick.


Use cookie cutters to cut into desired shapes and use an offset spatula transfer onto baking sheets lined with parchment paper.


Bake at 275F  for 20 minutes or until golden brown and just firm to the touch. Transfer to a wire rack to cool completely.


Once cookies are completely cool, decorate with my keto royal icing.


Top with my homemade sugar-free sprinkles!
