The second ice cream recipe for Ice Cream Week is one I’ve had on my mind for a very long time. In fact, I intended to make it last summer but somehow it became fall before I knew it, temps were dropping fast, and the last thing I felt like eating was ice cream. However, the idea of adding cocoa butter to a vanilla ice cream base to turn it into white chocolate stayed with me and I got to it almost right away when the mercury began to rise again. I knew the idea was a good one, because I have successfully used cocoa butter to make low carb White Chocolate Macadamia Nut Cheesecake that tasted as if they were made with sugar-sweetened white chocolate. And white chocolate and raspberries together, how heavenly is that? It seemed like the perfect recipe to give to Martina of Keto Diet Blog for the guest post I owed her.
