Ingredients
3/4cupfresh blueberries
2 to 3tbspSwerve Confectioners(or any sweetener that dissolves well)
1/4cuppacked mint leaves
1cupwhite rum
1/3cupfresh lime juice
1/2literclub soda
Blueberries and mint leaves for garnish
Instructions
Combine the blueberries and sweetener in a blender and blend into a thick puree.
Tear the mint leaves by hand and add to a pitcher that holds at least one liter. Crush with a muddler or the end of a wooden spoon to release the oils. Add the blueberry puree, white rum, lime juice, and soda and stir to combine.
Fill four highball or bucket glasses with crushed ice. Pour the mojitos into the glasses and garnish with blueberries and mint leaves.
Notes
If you would prefer a classic keto mojito, leave out the blueberries and add half a cup lime juice. Mix everything directly in the pitcher, stirring well to dissolve the sweetener.
