These Sausage Egg and Cheese Bites are easy, delicious, and packed with protein. Made in mini muffin cups for a fun, bite-sized addition to your healthy breakfast.
Preheat the oven to 325ºF and lightly grease 40 silicone mini muffin cups. (I used silicone muffin pans set on cookie sheets).
In a large skillet, brown the sausage until cooked through, about 6 minutes.
In a large blender, combine the eggs, cottage cheese, garlic, salt, and pepper. Blend until smooth.
Stir in the breakfast sausage and 1 cup (4 ounces) of the cheese.
Spoon the mixture into the prepared muffin cups and sprinkle with the remaining cheese. Transfer to the oven and bake 15 to 20 minutes, until puffed and firm to the touch.
Remove and let cool in the pans a few minutes, then pop out of the silicone cups.

Storage Information: Store the egg bites in the fridge in a covered container for up to 5 days. They can also be frozen for several months.
