This Tiramisu Protein Mousse is creamy, rich, and tastes just like your favorite Italian dessert. With 14 grams of protein per serving, it's gluten-free and keto-friendly too!

In a small bowl, whisk the warm water with the espresso powder until well combined. Sprinkle the top with the gelatin and let stand a few minutes to bloom.
In a blender or food processor, combine the cottage cheese, protein powder, and powdered sweetener. Blend until smooth, then pour the mixture into a large mixing bowl.
Gently warm the espresso mixture in the microwave and whisk until the gelatin is dissolved and liquid. Don't overheat. (Note: You can also do this in a saucepan over low heat on the stove).
Add the espresso mixture to the cottage cheese mixture and stir until fully combined.
In another bowl, beat the heavy cream with the vanilla extract until it holds stiff peaks. Gently fold into the cream cheese and espresso mixture until no streaks remain.
Spoon or pipe about one third of the mousse into 4 small dessert cups. Sprinkle each with some cocoa powder, then spoon or pipe another third of the mousse overtop. Sprinkle again with some cocoa powder.
Spoon or pipe the remaining mousse into the dessert cups and use a cheese grater to shave the chocolate overtop of each cup.
Chill 1 to 2 hours to set before serving.
