Cheesy Kale & Cauliflower Fritters

These low carb cheesy kale and cauliflower fritters are a delicious grain-free side dish. Or top them fried eggs for a healthy keto breakfast! This post is sponsored by Cut ‘N Clean Greens.

Sometimes I surprise myself. Or rather, sometimes a recipe I’ve created surprises me with how good it is. Take these cheesy kale and cauliflower fritters, for example. It’s not that I didn’t think they would be good. I mean, I pride myself on knowing how to coax good flavour out of any number of low carb foods. Add cheese and garlic to just about any vegetable and it increases the delicious quotient by about 10 billion. So I figured these would be pretty tasty, but I was surprised to discover just how tasty they were. I had anticipated that they would be of the garden variety tasty, but instead they were the “stand by the hot stove devouring them as they come off the pan” kind of tasty. And that was a very pleasant surprise.

They were also pretty easy to throw together, another pleasant surprise. The pre-chopped kale from Cut ‘N Clean is perfect for this recipe because it’s washed and ready to go. But I do advise getting out your big chef’s knife and chopping it up a little further so that the fritters form a little more easily. These fritters are a delicious side dish for dinner, and they really need nothing else to give them flavour (although I did top them with a little homemade ranch dressing to make them a tad more photogenic). But do you know what else these would be perfect for? Think breakfast, topped with a runny fried or poached egg. They are perfect for sopping up all that yolk!

    OMG, I can’t wait to make these!! Is it necessary to use packaged shredded cheese for this recipe, or would fresh grated be ok? Also, what could I sub for the coconut flour? I want to make these for a friend, but she’s allergic to coconut. Thanks for another amazing recipe!!

      Fresh grated is just fine for these. Might make them a bit more fragile so flip them carefully!

    Carolyn, I am curious about the presence of the stems in the bagged kale. I only used them one, not sure of the brand, but I found that they keep the hard stems in the leaves and that was a problem for the recipe I made. It is of course so much more convenient to grab the bag ready to go…. Do you think the sauteeing was enough to make it all work well in terms of texture?

      Mine had the stems as well, which is part of the reason I chopped it up further and that seemed sufficient.

    Okay, so here’s the deal. I have tried kale just about every way I can imagine and I just can’t like it. However, I am a huge fan of fritter type recipes and I think this might be the game changer I’ve been looking for. These looks amazing!

      I’ll answer my own thoughts — these were AMAZING with the spinach. I made half a batch (four) and ate them all for lunch. Now I’m going to have a carmelita!

    Great fritters! I like them with an obscene amount of garlic and a squeeze of lemon after frying.I removed most of the little stem pieces and went with just kale leaves. Also pulsed the mixture in a food processor a few times. Still great texture but also made the interior creamier, nice contrast with crisp exterior. Best part: disguised the kale enough to mystify kale haters who gobbled them up, ha-ha.

    I just made these for dinner tonight, exactly according to your recipe, and they were TERRIFIC! All four of us loved them. Similar to the previous commenter, I used my food proceessor on the cauliflower and the kale instead of chopping (because I am lazy like that) — just enough to get riced cauli and small pieces of kale. Worked beautifully. A great side dish for any protein — our choice was a low-carb meatloaf. Excellent. Thank you. You are my go-to low-carb blogger because not only do you offer great variety and creativity, but your recipes *work*!
