I am really not much of a Halloween person. Of course I loved the candy as a kid, but once I too old to Trick Or Treat, it never held much appeal for me. The decorating, the dressing up, the pumpkin carving, I could take it or leave it.
But while I am not all that into Halloween, I am very much into brownies. I have multiple recipes for keto brownies because I love finding new ways to dress them up and add new twists.
So when I spotted some adorable (full sugar!) Halloween brownies on Pinterest, I know I had to give them a low carb makeover. I was delighted by the results and even my grumpy, picky teens got a kick out them!
So fun to make!
I had such a ball making these fun keto Halloween treats. All I needed was a batch of brownies, some melted white and dark chocolate, and some fun sugar-free sprinkles. I used ChocZero for both the white and dark chocolate, as it melts so nicely.
Don’t be intimidated by the recipe, as these are actually quite easy and fun to make. I just wanted to be very thorough in my instructions to give you the tips I found worked best.
The chocolate eyeballs really make the brownies, in my opinion. You simply do small drops of white chocolate on waxed paper, and then you dot them with a bit of dark chocolate for pupils. You can make a whole bunch of them so that some of your brownies have multiple eyes.
I did some of the brownies as “monsters”, by coating them in chocolate and adding eyes and sprinkles. And then I made some mummies by adding eyes to plain brownies (not dipped in chocolate) and drizzling white chocolate back and froth over them.
They are so adorable and my husband said that they taste like Little Debbie Snack Cakes. I don’t think I’ve ever eaten those but I take it as a compliment!
Ingredients you need

- Keto brownies: I made these with my standard keto brownie recipe, but you can really use any recipe you like. If you want nut-free, try my coconut flour brownies. You can also use a boxed mix, as long as it fits an 8×8 or 9×9 inch pan.
- Dark chocolate: I used ChocZero dark chocolate chips. You could also use milk chocolate.
- White chocolate: I used ChocZero white chocolate chips.
- Cocoa butter: I always recommend a bit of cocoa butter when melting keto chocolate. It helps it melt more smoothly and thins it out a bit. But because cocoa butter is solid at room temperature, it makes the coating less melty. You can use coconut oil instead but you need to keep the brownies in the fridge.
- Sprinkles: I got some lovely brown and colored sugar-free sprinkles from The Sprinkle Company on Etsy. You can also get chocolate sprinkles from The People’s Keto. Or if you really want a project, you can can make your own Sugar Free Sprinkles!
Step by Step Directions
1. Make the brownies: Prepare the brownie batter as directed in the recipe or on the box. Bake in a parchment lined 9×9 inch metal pan until the edges are set but the center still seems a tiny bit wet. Remove, let cool, and cut into 25 squares. Freeze until firm.
2. Melt the chocolate: In a heatproof bowl set over a pan of barely simmering water, melt the white chocolate with half an ounce of the cocoa butter. Stay nearby and stir frequently to make sure it doesn’t seize. Remove from heat.
Set another heatproof bowl over the pan and melt the dark chocolate with the remaining ounce of cocoa butter. Stir until melted and smooth and then remove from heat.
3. Make the eyeballs: Set a sheet of waxed paper over a cookie sheet. Take a small spoon and use it to make small drops of white chocolate on the waxed paper. Then take a toothpick and use it to make small dots of dark chocolate in the center of the white drops. Place the tray in the freezer until set, about 1 hour.
4. To make the Monster Brownies: Dip frozen brownies into the melted dark chocolate. Place on a waxed paper lined cookie sheet. Carefully peel a few eyeballs from the paper and place gently on the dipped brownies. Quickly sprinkle a few keto sprinkles all over the top of the brownies, before the chocolate sets. Refrigerate until firm.
5. To make the Mummy Brownies: Leave the brownies unzipped and place two eyeballs on each. Gently rewarm the white chocolate until it’s a drizzling consistency. Spoon into a ziplock baggie and seal. Snip a tiny hole in the corner of the bag and drizzle back and forth over the brownies, allowing the eyes to peek through.
Expert Tips
As I said, these really aren’t hard to make. But I do have some tips for you to make the whole process easier.
Take the time to freeze the brownies after you cut them. You want to them to be firm enough to dip in the chocolate and not fall apart. Brush off any loose crumbs as well, to avoid getting crumbs in the chocolate coating. By the time you finish, there WILL be some crumbs in there, but it adds to the weird monster appeal!
You want to make sure the dark chocolate is thinned out enough to easily coat the brownies. You can’t simply melt the chocolate by itself. I highly recommend cocoa butter, but you can also use coconut oil. Don’t use butter, as it tends to have the opposite effect and make the chocolate even thicker.
The eyeballs don’t need to be perfect or even. In fact, they look more fun and creepy if they are a bit uneven. You also don’t need need to put two on each brownie. You can have some one-eyed monsters or ones with multiple eyes.
White chocolate is finicky and can seize easily so do NOT walk away while it’s melting. I also found that it firms up quickly in the decorating bag, so make sure to do all your mummy brownies at one time.
If you don’t have keto sprinkles, you can simply do multiple eyes on each brownie. Or you can make some fun little white chocolate ghosts to add to the top. You can also add a bit of natural food dye to shredded coconut for fun, easy “sprinkles”.

Keto Halloween Brownies Recipe
Ingredients
- 1 recipe keto brownies
- 3 ounces sugar-free white chocolate chips
- 5 ounces dark chocolate chips, sugar-free
- 1 ½ ounces cocoa butter divided
- Keto Sprinkles (see notes)
Instructions
Brownies
- Line a 9×9 inch metal baking pan with parchment paper and grease the parchment. Prepare the brownie batter as directed and spread evenly in the pan.
- Bake 15 minutes, until the edges are set but the center still seems a tiny bit wet. Remove and let cool completely in the pan.
- Once cool, cut into 25 even squares. The place them in the freezer for at least 1 hour. (You can also make 16 bigger ones or 36 mini brownie bites… do what you wish!).
To make eyeballs
- In a heatproof bowl set over a pan of barely simmering water, melt the white chocolate with half an ounce of the cocoa butter. Stay nearby and stir frequently to make sure it doesn't seize. Remove from heat.
- Set another heatproof bowl over the pan and melt the dark chocolate with the remaining ounce of cocoa butter. Stir until melted and smooth and then remove from heat.
- Set a sheet of waxed paper over a cookie sheet. Take a small spoon and use it to make small drops of white chocolate on the waxed paper (roughly circular drops about ½ inch in diameter). Make as many as you like – two or more for each brownie.
- Then take a toothpick and use it to make small dots of dark chocolate in the center of the white drops. Start with the white drops that have set the most.
- Place the tray in the freezer until set, about 1 hour.
To make monsters
- Dip frozen brownies into the melted dark chocolate (rewarm over the pan of simmering water to make sure it's very liquid). Toss in the chocolate and lift out with a fork, tapping to remove any excess chocolate. Place on a waxed paper lined cookie sheet.
- Carefully peel a few eyeballs from the paper and place gently on the dipped brownies. Quickly sprinkle a few keto sprinkles all over the top of the brownies, before the chocolate sets. Refrigerate until firm.
To make mummies
- Place two eyeballs on the top of un-dipped brownies.
- Gently rewarm the white chocolate until it's a drizzling consistency. Spoon into a ziplock baggie and seal. Snip a tiny hole in the corner of the bag and drizzle back and forth over the brownies, allowing the eyes to peek through.
- Refrigerate until firm.
