Black & White Cookies

The classic Black & White cookie gets a low carb, grain-free makeover. It’s chocolate, it’s vanilla, it’s everything you want in one healthy dessert!

I don’t take recipe makeover requests very often any  more. It’s not because I don’t love all of your wonderful emails and the ideas you share with me. And it’s not because I don’t want to makeover your favourite recipes into a low carb, grain-free treat. And it’s certainly not because I think I can’t succeed at making these treats something you will love just as much as you did the original. I do love your ideas and I do want to make everything over and I do think I can succeed at almost all of them. The problem is one of time management. I have so many ideas of my own, and I am bombarded every day by new sources of inspiration, from the internet to the printed page. I am on low carb recipe idea overload and it would take me several lifetimes to cook and bake all the things I want to make.

But sometimes there are makeover requests I just can’t pass up. This one was offered up by Lance, who misses his Black & White Cookies ever since he was diagnosed with diabetes. How could I ignore such a plea? Besides which, the Seinfeld episode about black and white cookies instantly sprang to mind and I couldn’t resist attempting a healthier version of something so beloved by Jerry, Elaine, George and Kramer. The funny part is that I was very unimpressed with black & whites the first (and possibly the only) time I tried them. They were overly cakey for my liking and the frosting was rather tasteless. But maybe I just had a poorly made black & white. Maybe I needed to give them another chance. And maybe my low carb ingredients would be up to the challenge of this New York classic. Plus I knew the cookies would REALLY appeal to my kids.

Low Carb Sugar-Free Black & White Cookies Recipe

The results? Well I am no expert on Black & White Cookies but I’d say these were just about perfect. The cookie was soft and cakey but still tasty, and the two flavours of frosting were delicious. My kids adored them, as predicted. And this time, I could understand the appeal too. Low carb cookies the size of your fist with both chocolate and vanilla? The best of both worlds.

    I made these cookies. They were tender, soft and delicious. I was in a hurry so I dropped them by the tablespoon on parchment paper lined cookie sheets. They came out perfect. I drizzled the white icing over the cookies and placed the extra in the freezer. I didn’t make the chocolate side since I prefer vanilla. I would most definitely make these again!

    Dear Carolyn, I can’t tell you how much it means to me that you created this recipe. I have missed the cookies so much. I made them last night, I waited until this morning to sample them so the frosting could harden. They are black and white cookies as I know them at their best, maybe better than I’ve known them. Everything about them is right. I live in New York, and they are available all over the place, often not good, but sometimes very good, and I have had to pass them by. That’s been a little difficult, but it won’t be anymore! I couldn’t thank you enough.
