Garlic Parmesan Wings (Low Carb)

I have already talked about Camp Blogaway and how much I loved the experience. I will most certainly consider going again next year, even though it’s a long trip from here on the East Coast. Not having been to many food blogger conferences, I was amazed at all the sponsorship Patti had put together for this event. We had goodie bags galore, to the point where what had been a half-empty duffel bag on the flight out was stuffed to full capacity on the way home. There were also several on-site sponsors showcasing their wares, and we all took full advantage of the opportunity to try the cheeses and wines, knives and paper goods, mangoes and honey. Well, I had to skip the honey, sadly. I love the stuff but honey is not kind to diabetics.

One of the more enjoyable, and interactive, presentations was put on by Gourmet Garden. I didn’t recognize the name at first, but once I saw the product, I immediately knew it. Tubes of fresh, chopped herbs, ready to be added to any recipe. I’ve seen them many a time in my local grocery stores, although I’ve never purchased them before. The presentation consisted of having us mix whatever combination of herbs we wanted into Greek yogurt to create a dip for the fresh vegetables on our table. We also learned that the herbs are all grown, processed and packaged in Australia, and are almost entirely organic.

Now, as a foodie, I of course want to always use fresh herbs grown in my garden or purchased from my local farmer’s market, right? Sure, except for the fact that I live in New England, where the growing season is very short and fresh herbs aren’t always readily available. And the “fresh” herbs at my local grocery stores don’t always look so hot. Besides which, I am feeding a family of five and anything that cuts down on my food prep time, like already chopped herbs, is a huge boon for me. So I really loved these tubes of pre-chopped herbs. They are certainly a far sight better than the dried variety in most instances.

After I arrived home,Gourmet Garden contacted me and asked if I would like a cooler of their herbs to review on my blog. Since I was a fan, I was more than happy to receive such a package on my doorstep. And when I found myself drooling over the Baked Parmesan Garlic Wings on Steamy Kitchen, I realized that adapting the recipe would be a great use of the Gourmet Garden herbs. And boy, were they ever! These wings are truly delicious, and the traces of herbs left in the bowl after tossing the wings was so good, I kept sticking my fingers in and licking it up (don’t worry, the chicken was cooked at this point!). Not having to chop the garlic or the basil was a huge plus for me, and I also used the Gourmet Garden oregano instead of dried oregano.

You could serve these wings with a blue cheese sauce. But personally, I think they are perfect just as they are.

Parmesan Garlic Wing Recipe

Garlic Parmesan Wings (Low Carb) - adapted from Steamy Kitchen

Yield: 4 servings

Ingredients

  • 1 tsp Gourmet Garden chopped oregano
  • 1 tsp chopped, dried rosemary
  • 1 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1 1/2 lbs chicken wings
  • 2 tbsp olive oil
  • 1 tbsp Gourmet Garden chopped basil
  • 1 tbsp Gourmet Garden chunky chopped garlic
  • 1/4 cup finely grated parmesan cheese

Instructions

  1. Preheat oven to 425F.
  2. In large bowl, whisk together chopped oregano, dried rosemary, ground cumin and salt. Add chicken wings and toss to coat, making sure that all wings get some of the herb mixture.
  3. Lay wings in single layer on broiling pan or baking sheet and bake 20 to 25 minutes, until golden brown.
  4. In another large bowl, whisk together the olive oil, chopped basil, chopped garlic and parmesan cheese. Add cooked wings and toss well to coat.
  5. Serve hot.

Notes

Total carbs = negligible.

  15. These were great, I made them today. I didn’t have any fresh herbs so I used all dry and they still came out delicious! Oh…I used butter rather than Olive oil and totally forgot to add the garlic at the end but they were a hit…and no one knew but me anyways!

    • I don’t mind the fat, but I’m a real wimp when it comes to frying; I hate the mess and the spatter burns. So I also liked that these were good made in the oven.
