Have you ever made keto bread in your Instant Pot? This was my first attempt and I have to say, it completely exceeded my expectations. I love it when that happens!
It’s remarkably tender, full of white cheddar and fresh herbs, and it has a delicious crusty exterior. And it’s out of this world lightly toasted with a slather of butter.
I’ve been fortunate to work with Pete and Gerry’s Organic Eggs for several years now, and they requested a keto comfort food recipe. I tossed out the usual ideas, things like meatloaf, baked eggs, and the like. I threw in a cheesy instant pot quick bread at the last minute and I guess it caught their attention.
I am so very glad it did!
Bread in the Instant Pot
It’s really a unique way to make quick breads, and I see more versions in my future.
The pressure of the Instant Pot makes the bread rise really nicely, but it also keeps it incredibly moist and tender. It also makes little air holes, the sort you might see in a rustic bread from a bakery.
The only thing the IP can’t do is brown the outside nicely. But that’s easily addressed by a few minutes under the broiler. I brushed mine with butter and added some more grated cheddar, and got a delightfully crunchy crust.
This is seriously my new favorite keto bread and I have Pete and Gerry’s to thank for that.
Quality eggs are worth it
Unlike yeast breads, quick breads rely on eggs for both rise and structure. And good quality eggs make a huge difference, not only to the recipe itself but to our society and our environment.
I simply don’t trust factory farm eggs for freshness or quality. And the waste they produce and how they treat their hens is truly concerning.

Tips for Keto Instant Pot Bread
- The right pan. You need to have a pan that fits inside the pot. I used a 7-inch springform pan but a ceramic souffle pan may work well too.
- Cover with foil. Instant Pots require liquid to create pressure and you don’t want that extra liquid in the bread. If you use a springform pan, you want to wrap both the bottom and the top in foil, to avoid excess moisture seeping in through the seams of the pan.
- Use the cake setting. This setting works perfectly for cakes and quick breads.
- Broil the top. Because of the moist heat and pressure, the bread doesn’t brown on the top. But a few minutes under a broiler makes it absolutely delectable. Set it on the middle oven rack, so it’s a little further from the heat source.
- Slice it up and enjoy!
Turn this bread into Thanksgiving Stuffing!
As I’ve been munching on this bread for the past few days, it occurred to me that it would make fabulous stuffing or dressing.
Once it’s baked, simply slice it up and cube it. Then let it sit and dry out overnight, or place it in a warm oven for a few hours.

Can this be made in the oven?
I know that not everyone has an Instant Pot so here are the oven directions:
Prep the batter as directed. You can make this in an 8×4 inch loaf pan, or in the 7-inch pan. Cover the top with foil and bake at 350F for 30 to 40 minutes, until the top is firm to the touch.
Preheat the broiler and brush the top with the melted butter. Sprinkle with cheese and broil until golden.
Total fat: 18.30g
Total dietary fiber: 2.03g

I don’t have unflavored whey protein powder. I do have unflavored collegen protein powder. Will this work?
With almond flour recipes, collagen tends to make things very gummy and hard to cook through.
Carolyn, just got inspired to try this recipe, and WOW! It is delicious! I used 2 Tablespoons dried chives, since that’s what I had. When I opened the fridge to get out the block of cheddar to grate, I spied a container of shredded Gruyère that needed to be used, so I used it instead of cheddar. It is yummy! Also, I don’t have cake setting on my IP, so did manual High for 40 minutes, and it was perfect! I suggest setting a timer when using the broiler – I got distracted and almost burned the top of the bread! But it’s still so yummy! I don’t think it will last long. . .

I’ve missed bread so much, and now I don’t have to…this is absolutely delicious! Turned out perfectly. My instant-pot setting for “cake” is called “multigrain”, in case anyone else has different buttons on their instant pot. It automatically set it for 40 minutes like the recipe calls for. Love, love, love using your recipes! They are amazing.

I have an IP Duo Nova. It doesn’t have a cake setting. Any suggestions about what setting I can use instead, and for how many minutes?
I googled it and found an article that said regular setting for 40 min.

I have not but it should be fine. Still brush the top with butter and broil a bit at the end, if you want it nicely browned.

I have looked in full screen view and every other way I can think of and cannot view the recipe or a print icon. Please advise as this recipe looks delicious. Never has an issue like this before. Also when clicking on links from your emails it keeps asking me to sign up and I’ve already signed up…that is why I am getting emails. So something is going on while trying to link through your emails. Just wanted to let you know.
Scroll down to close to the bottom of my post. There is a big link that says Keto Instant Pot Bread Recipe (it’s in green). It takes you right to the recipe on Pete and Gerrys.
My sign up is only supposed to come up once per person every few months. So if you’re getting it more often, then your browser may be out of date OR you have a cookie blocker so the system sees you as a new person every time. Try updating your browser first.

The page the recipe is on is messed up. The instructions slide up under the ingredients list so it’s very hard to read. I also don’t see a print button. I really want to make this and will wait for the page to be corrected so I can print it.
The print button is at the very top of the recipe, close to the title (looks like a printer). Also, I went and checked it out on Pete and Gerry’s website and am having no issues. The instructions don’t slide up and down, it’s just that the ingredient list stays put as you scroll. Which actually helps during cooking!
I mentioned your issue to Pete and Gerry’s. Here is what they said:
I spoke too soon – a colleague was able to replicate the issue (see attached). It appears that this can happen if you view the recipe in a particularly small window, so I would recommend that the user either view the recipe in full screen or in print mode. I’ve reached out to our web development team and hope that they can resolve the underlying problem as soon as possible.

I love the cheesy Keto skillet bread and we make it regularly. How does this differ in texture from that one?
VERY different. This is more dense but also airy and it holds together super well. They are two very different breads.

I’d like to see instructions for the Ninja Foodi multi cooker. A few minutes on air fry would also crisp top. Foodi doesn’t have a “cake” setting.
I can’t possibly give you instructions since I don’t own one. I suggest googling quick bread recipes for that device and following those with my recipe.
