This low carb ham and cheese cauliflower soup is full of great flavour. It’s so easy to make, just add everything to your crock pot, blend it up and dinner is ready!
I have a dear friend, someone I met through blogging, who isn’t feeling very well right now. She was rushed to the hospital last week for emergency surgery and she’s been there all week. She’s going to be fine, in the end, but it’s no fun to be stuck in the hospital with a tube stuck up your nose and nurses coming in at all hours to take your vitals. She also has three young boys at home and her husband has had to hold down the fort while also trying to be there for his wife.
And here I am, clear across the country, wishing there was something I could do to help. And then I realize that there IS something I can do to help! I can coordinate some fellow bloggers to write guest posts for my dear friend, to keep her blog rolling along nicely while she is out of pocket for a while. Because, like so many of us, her blog is her livelihood and even a week or two away can severely impact her work.

You can just highlight, copy and paste it into a word document or even save it as a draft in your email program by “writing” an email. I rarely print off blogs. I do this method, add my own notes or preferences, then print when I’m going to make the dish.
It’s funny Carolyn, I was looking yesterday for this exact soup, and also broccoli, ham & cheese soup, and nothing really hit me, so I ended up making my own recipe last night for dinner. I love trying other cooks recipes, but not this time 🙂

I made the Slow Cooker Ham and Cheese Cauliflower Soup for supper tonight. It was sooo good, hot and satisfying. In a word it was delicious! It was easy too!
We volunteer on Thursdays so I started the cauliflower and other ingredients this morning. When we got home this evening I pureed the cooked cauliflower in the crock pot, then added the cheddar and pureed again. Added the ham and red pepper and let the ham warm a few minutes. As quickly as I set the table supper was ready. This was wonderful to come home to. Thank you for the recipe!

I made a double batch of this soup today and it was fabulous. Only thing I’d suggest is to puree the cauliflower before putting the cheese in. I had to use a food pricessor and it took me at least 20 minutes to clean the melted cheese out the processor bowl. What a mess, but worth it. Took it to church tonight and came home with very little.

Good point. I have an immersion blender so I just use that but the cheese does tend to get all over it. Pureeing the cauli first might help!

I added the liquid to the blender along with the cauliflower and had no issues with the cheese. 🙂
