 It is exactly 2 weeks from today that we uproot our family and move to the opposite coast of the continent. And if you quickly do the math and look at a calendar, you will see this means that we are moving a few days before Thanksgiving. We will arrive in the Pacific Northwest with practically nothing, as all our stuff will still be in transit from Boston. A few clothes, a few air beds, some sleeping bags and that’s about it. Our Thanksgiving this year will be very pared down and it’s likely we will be ordering our meal from the Whole Foods just up the street. And we will be eating it on paper plates with plastic cutlery, sitting at a card table borrowed from friends. I don’t think you can get more minimalist is than that!

So I’ve been cranking out the low carb Thanksgiving recipes early this year, so I can at least say I had some lovely home-cooked dishes, even if it’s not on the actual Turkey Day. And this stuffed turkey breast recipe is a serious winner and perfect for small families who don’t want to cook a whole ginormous bird. It was perhaps the  most flavourful and moist turkey breast I’ve had in years and that’s saying a lot. I would easily consider making this my go-to turkey recipe and skipping the rest of the bird from now on. It was that good.

Low Carb Paleo Stuffed Turkey Breast Recipe

I developed the recipe because I was asked to try out these Pop-Up® Disposable Cooking Thermometers from Volk Enterprises. I have to say right off the bat how impressed I was with these unassuming-looking little timers. Can I even confess I didn’t quite trust it to work that well? I kept checking on the roast, worried that it was overcooking and that the timer wouldn’t actually pop. But pop it did, and when I tested out the internal temperature with another instant-read thermometer, it has reached 180F exactly as the Pop Up timer promised.

There are a whole range of these Pop Up® disposable cooking thermometers, ranging from 138F to 203F and they certainly take a lot of the guesswork out of cooking turkeys and other roasted meats. And astonishingly, they are even more accurate than most traditional probe cooking thermometers, as they are within +/- 2 degrees of accuracy. Because you are simply looking for the visual clue of the popped timer, you don’t have to constantly haul your turkey out of the oven to check on it. Keeping the oven door closed means your turkey can actually cook faster! I would absolutely use these pop-up timers from Volk again and not just for Turkey Day. Mushroom & Sage Rolled Turkey Breast

Ingredients
 

  • 1/4 cup coconut oil, or butter, divided, room temperature
  • 10 ounces mushrooms, finely chopped
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 3 tbsp chopped fresh sage, divided
  • 1 boneless butterfiled turkey breast, (3 to 4 lbs)
  • 1 180 F Pop Up® disposable cooking thermometer, (optional, but very useful!)

Instructions

  • Preheat oven to 375F.
  • In a large saute pan over medium heat, heat 2 tbsp butter or oil until melted and beginning to froth. Add mushrooms and cook, stirring frequently, for 2 or 3 minutes. Add garlic, sprinkle with salt and pepper, and continue to cook until most of the liquid has evaporated, 4 or 5 minutes more.
  • Add 2 tbsp chopped sage and cook 1 minute more. Remove from heat.
  • Remove skin from turkey breast and set aside (do not discard). Lay turkey breast on a work surface and cover with plastic wrap. Pound with a kitchen mallet to an even 1/2 to 1-inch thickness.
  • Spread mushroom mixture evenly over turkey breast, leaving a 1 inch border and roll up from the short end tightly into a log. Wrap reserved skin over log and tie at several intervals with kitchen twine.
  • Place on a broiling pan and rub all over with remaining butter or oil. Sprinkle with remaining sage and season with salt and pepper.
  • Place pop-up timer, if using, into thickest part of the turkey roll (pierce the skin with a sharp knife if need be).
  • Roast until timer pops up or until internal temperature reaches 180F, approximately 50 to 60 minutes.
