I love your recipes. We had a totally Keto(lowcarb) thanksgiving feast using your ebook recipes. My favorite was the cranberry sauce! I usually begin baking the first week of December. I make my shortbread, sugar cookie and gingerbread doughs and freeze them in logs for rolling out or slicing and baking as needed. The second week I work on candies. I wind up giving majority of my baking as gifts to friends and family, but it is also nice to have some in the house.

I start holiday baking the week before Thanksgiving for our annual Friendsgiving! Our friends prefer Carolyn’s keto pecan pie over all other pecan pies they’ve ever had! And pumpkin caramel poke cake is another must! Then it’s off to baking for Christmas with chocolate mousse pie, Italian ricotta cookies and keto hot chocolate!

We don’t start the holiday baking until the week of Christmas! We are those folks that wait until the last minute for treats and then stay up late and rush like crazy heads!!
It’s all worth it when we see those smiles on the faces that end up with the mad rush end products! Some day we will learn….maybe when we are retired and have more time.

I usually start cooking the day before. It helps keep me from being too stressed out on the actual Holiday if I have things made ahead of time. If I had a big freezer, I’d be one of those people that made things weeks in advance.
