Low Carb Butter Pecan Ice Cream Pie Recipe

Stop! Stop right there. Seriously, just drop whatever you are doing and pay attention, please! What I am about to say is extremely important and you don’t want to miss it. Really truly important. Let me just tell you right now that this, this here low carb Butter Pecan Ice Cream Pie is my favourite recipe of the summer. I do not say that lightly, believe me. You know I am something of a keto dessert connoisseur so I know my stuff. And this is it, the real deal, I’m telling you. This is the one that will make believers out of your most diehard sugar and carb consuming friends. The summer is not over, of course, so there is plenty of time for another amazing dessert to come along and knock this one of its pedestal. But while I love a lot of different kinds of recipes, this one really is hard to beat. Long may it reign!

Best keto dessert of the summer! Butter Pecan Ice Cream in a grain-free pecan crust.

I love ice cream and I love making ice cream. And while I typically lean toward the chocolatey flavours, I somehow got a hankering for Butter Pecan. And then, of course, I had to take it a step further, as I am wont to do when it comes to dessert. I decided to make a crust out of ground pecans and oh man, I am glad that idea came to me. I think what really made this stellar was the addition of some salt in the crust because then it had this sweet and salty thing going on. My husband raved about it too and we didn’t share even one little piece with the kids.

Of course, you could just decide to make the butter pecan ice cream part and leave it at that. But you’d be missing out!

My new favourite low carb ice cream recipe!

Hi Carolyn! I love your recipes!

In your newer ice cream recipes, you use 1/2 Swerve and 1/2 Bocha Sweet/Allulose. Would that work well in the recipe on the Swerve Sweeties site?

Yes, it certainly will! It really helps the ice cream be softer right out of the freezer.

Does this come out hard if frozen? Could I combine swerve/ allulose as in more recent recipes to make it softer?
