Hello from sunny Portland! Seriously, something is amiss here because we have had a several week stretch of warm sunshine with very little rain. The mornings are foggy and chilly and everything looks damp, and then by mid-day, it’s all burned off and we are basking in spring-like weather. Having lived on the West Coast before, I am only too aware that this is highly unusual and that I should be making the most of it every single second of every beautiful day. Who knows what February is going to be like?
Given the current weather patterns across the country, I am not in the least bit unhappy that I moved away from New England. At least not for the moment. While friends back east were bracing for record-breaking snowfalls, I was opening up my windows and doors to air out the house. I don’t miss shovelling snow, I really, really don’t. I also don’t miss having kids home for two or three snow days, getting more and more stir crazy by the minute. When I told the kids about the storms back east, they sighed and said how much they missed playing in the snow. And I laughed and said, “yes, you go out for about 20 minutes, and come back in complaining of how cold your hands and feet are!”. I can honestly say I am not missing it at all. And if I do get a hankering for snow, I can drive a few hours to Mt. Hood and get my white stuff fix. That works for me!
But if you do happen to be somewhere cold and white and you’re looking for an easy and delicious comfort food recipe, you’ve come to the right place. This is a recipe I created when cleaning out my freezer before the move and wondering what I should do with a package of chicken legs and a package of chorizo. I ended up making a creamy braised stew that was so good, I knew it would become a family favourite. We’ve already made it several times and it goes down like fog, as my husband would say. The chicken is so tender, it falls right off the bones. Preferably right into your mouth!
