So apparently I am a total hypocrite. Quite some time ago, I told you that one of the joys of being a low carb food blogger was that I never felt the need to do over-the-top, crazy desserts. I never felt the need to out-do other bloggers by stuffing cookies inside of brownies inside of cakes and then turning it into ice cream. Because it was simply enough for me to make a really good, healthy version of a classic recipe that everyone loves. I didn’t need to do two-in-one recipes or dessert mash-ups. If I could create a really good chocolate chip cookie, that was good enough for me.
But I have a guilty secret. I have to admit, I have been sucked into the fad of creating recipes that include the elements of two separate desserts. I have fallen prey to the delicious looking mash-ups I’ve seen on Pinterest and I have now embraced the trend. But it’s not what you think. It’s not about competition or the need to out-do anyone. And it’s not about SEO or enticing the search engines to send me more traffic through keyword searches. It is because it’s remarkably enjoyable. Ridiculously enjoyable, in fact. Simply put, it is fun to dream up a dessert-inside-a-dessert recipe and see if I can make it work.
And hey, I’ve got kids to please! Taking their favourite low carb chocolate pudding recipe and stuffing it into the best low carb chocolate chip cookie? That wins me some serious mom points. I will be honest, I am not above bribing my kids with delicious desserts…delicious, HEALTHY desserts that is. Score one for me!
