Hello, gorgeous yellow sunshine! It’s been a while since I’ve seen you and you’ve finally decided to hang around for a while. You played peek-a-boo for several months and it was beginning to seem like you would never join us here in the Pacific Northwest. But now that you’re here, we are all doing everything we can to make the most of your stay. Everyone seems to be coming out of hibernation, wandering out of their houses, pulling off layers of heavy clothing and blinking in the bright light. Neighbours I haven’t seen for months are sitting on their porches, chatting and watching their kids play outside. That hint of summer is in the air and I couldn’t be happier. And with less than three weeks of school left, neither can my kids!
Now we all seem to be craving frosty cold drinks and creamy ice creams and ice pops. My kids come home from school, all red-faced and sweaty, dying for something cold to sip. And they don’t want water, that’s too plain, too boring, not nearly fun or summery enough. So the pressure is on for me to get a little fancy for them. But you know I steer clear of sugary juices and sodas, no matter what the weather is doing. When you are sipping to try to cool off, the sugar can add up so quickly without anyone noticing. And really, there are so many great ways to go sugar-free.
I’ve been eyeing frosted lemonade recipes on Pinterest and they look like a perfect summer treat. But I took a closer look at the conventional recipes recently and I was horrified to see the ingredients. A full can of lemonade concentrate and 2 scoops of vanilla ice cream? And the recipe only made two servings! My little sugar-free low carb heart shudders to think of the carbs and sugars in one of those. There is no way I could serve that to anyone in good conscience. So it was time to do a little experimenting. I wanted to make it just as easy and just as delicious, but without all the added sugar.
I could tell you to make your own sugar-free ice cream for this low carb frosted lemonade but that is far too much work for what should be a fun summer recipe. So instead I simply whipped some organic heavy cream and then froze it in scoops. (You could easily use coconut whipped cream if you want it to be dairy-free). Then I added some freshly squeezed lemon juice and some strawberries I’d picked up at the farmer’s market. Add a little of your favourite low carb sweetener and you’ve got the perfect tangy sweetness that screams “summer in a glass”!

- 1 1/4 cups whipping cream
- 1/2 tsp vanilla extract
- 1/2 cup chopped strawberries
- 1/4 cup fresh lemon juice
- 2 to 3 tbsp powdered Swerve Sweetener
- 1 cup crushed ice
- 1 cup water

In a large bowl, whip the cream with the vanilla extract until stiff peaks form. Dollop large spoonfuls onto a parchment paper lined baking sheet and freeze until firm, about 3 hours.

Once frozen, peel the whipped cream from the paper and place in a large blender. Add the strawberries, lemon juice, and 2 tablespoons of the sweetener and puree. Add the ice and water and blend until well combined.

Taste and add more sweetener if desired.

Pour into 4 glasses and serve.

Hi Tina… Google “coconut whipped cream” and you will find lots of recipes. You can just replace the sweetener with Swerve.

Well, the ice will melt and it will get pretty watery. I recommend just making a half batch if you don’t want the whole thing.

You will need an entirely different approach here. You need to first make a strawberry water mix, boil it to soften the berries, and then press it through a sieve.
