So today is Labour Day, the unofficial end of summer. And while I am looking forward to fall and all the deliciousness it brings, I am loathe to let go of summer at the moment. This fall is going to bring some amazing changes to my life in the form of a cross-country move and a new job for my husband, and all the ensuing craziness has me a touch apprehensive. I am excited for the move overall and truly delighted to be heading back to the Pacific NorthWest, but there is much to be done when one decides to uproot kids and household and move 2500 miles away to a city one has never even visited. So you might understand why I am clinging to summer a little harder than usual this year.

 

Low Carb Homemade Caramel Frappuccino

 

So I thought I would share a recipe I’ve been making all summer long to keep cool and refreshed. Seriously, it’s so good and it’s incredibly filling. It’s like a fat bomb in a glass, and can keep me full throughout the morning. It took me a while to get the amounts just right and I have to say that having a good high-powered blender like a Blendtec really makes a difference.

Creamy, dreamy low carb Caramel Frappe. This deliciously satisfying iced coffee is like a fat bomb in a glass.

Ingredients
  • 1 1/2 cups crushed ice
  • 1/2 cup unsweetened almond milk
  • 1/4 cup heavy whipping cream
  • 1 packet Starbucks VIA© Ready Brew Coffee or 1 tsp instant espresso powder
  • 2 tbsp powdered Swerve Sweetener
  • 1/4 tsp caramel extract
  • Lightly sweetened whipped cream for topping
Instructions
  1. In a high-powered blender such as a Blendtec, combine ice, almond milk, whipping cream, coffee, stevia extract, and caramel flavor.
  2. Blend until smooth.
  3. Top with whipped cream.

Serves 1 to 2. For the whole recipe, there are 2.99 g of carbs and .5 g of fiber. Total NET CARBS = 2.49 g.

    Carolyn! I just found you and love you. Off topic question, but can you freeze your cake creations? I made your olive garden-esque lemon cake this weekend, but am starting a whole 30 diet today. would hate to throw it out because it is DEE-LISH 🙁

      If it’s already frosted, the frosting may change a little in consistency when you thaw it out but yes, it should be pretty good. I freeze my muffins and cakes (usually unfrosted) all the time!

    Nana’s little kitchen blog has been deleted-see link above. Also, I’m looking for a frappe powder “recipe” possibly including whey protein powder and xanthan gum to use as a base. Would you have any recipes or ideas about this? I’ve heard it keeps frozen drinks from separating.

    I think I will try this but leave out the Stevia and add a tiny bit of honey. Honey is lower on glycemic index and is natural, plus I will add a little vanilla for natural sweetness too.

    It’s 2020 and I’m just seeing this post for the first time- searched for frap on the blog. I made this for the second time (yesterday and today – I added collagen today which was great) and just looked up Ashley. My dad passed away from lung cancer (61) and that was hard to watch him go through and think of all the moments that he would miss – I can only imagine what she’s been through. I’m sorry that I wasn’t able to do something for them at the time – but I’m so grateful that there are people like you out there that try to help others, and lend your influence for others like you do. Thank you for being the type of person that you are and for being there for your friend. I looked at her blog – it looks like she and her family have gone through a lot over the years. Of course the drink was delicious – but everything I’ve tried from you has been.
