So today is Labour Day, the unofficial end of summer. And while I am looking forward to fall and all the deliciousness it brings, I am loathe to let go of summer at the moment. This fall is going to bring some amazing changes to my life in the form of a cross-country move and a new job for my husband, and all the ensuing craziness has me a touch apprehensive. I am excited for the move overall and truly delighted to be heading back to the Pacific NorthWest, but there is much to be done when one decides to uproot kids and household and move 2500 miles away to a city one has never even visited. So you might understand why I am clinging to summer a little harder than usual this year.
So I thought I would share a recipe I’ve been making all summer long to keep cool and refreshed. Seriously, it’s so good and it’s incredibly filling. It’s like a fat bomb in a glass, and can keep me full throughout the morning. It took me a while to get the amounts just right and I have to say that having a good high-powered blender like a Blendtec really makes a difference. I will be reviewing the Blendtec Designer 725 blender in a few days and it’s an amazing machine. And I get to give one away to one lucky reader so stay tuned for that.
Now on to more serious stuff. I am far from the only one with upheaval in my life and I know my troubles are minor compared to many. A dear blogger, Ashley from Center Cut Cook, has been going through the sort of upheaval no one should have to experience. Last December she found out she was pregnant with her first child after many years of trying. And within two weeks, she also found out that her husband Ryan, a healthy 29 year old, has Stage 4 colon cancer. They’ve been through a wild ride for the past 9 months, of chemotherapy for him and ultrasounds for her. The swings from up to down have been enormous, with good news following bad following good. Thus far, Ryan has been an amazing fighter but the cancer has spread and his prognosis is uncertain. Their little boy, Miles, was born this summer, beautiful and healthy and a true light in their lives.

Creamy, dreamy low carb Caramel Frappe. This deliciously satisfying iced coffee is like a fat bomb in a glass.
- 1 1/2 cups crushed ice
- 1/2 cup unsweetened almond milk
- 1/4 cup heavy whipping cream
- 1 packet Starbucks VIA© Ready Brew Coffee or 1 tsp instant espresso powder
- 10 drops liquid stevia extract
- 1/4 tsp caramel flavour
- Lightly sweetened whipped cream for topping
- In a high-powered blender such as a Blendtec, combine ice, almond milk, whipping cream, coffee, stevia extract, and caramel flavor.
- Blend until smooth.
- Top with whipped cream.
Serves 1 to 2. For the whole recipe, there are 2.99 g of carbs and .5 g of fiber. Total NET CARBS = 2.49 g.
