I’ve come to the conclusion that I don’t cook nearly enough fish at home and I am aiming to change that. My problem isn’t that it’s hard or intimidating. In fact, cooking fish is deceptively easy and that may be where the fault lies. If I mess up fish at home, it’s usually because I thought it would be harder and need more done to it, when it really just needed a simple sauce and a simple cooking method. Good, fresh fish is best treated with a light hand…some salt and pepper, some herbs, some lemon, and perhaps a little butter. It cooks quickly and easily, and unlike meat, you can always tell when it’s done. That telltale flakiness is a dead giveaway. So really now, why don’t I cook more fish at home?

I think for a lot of folks, accessibility to good, fresh fish is a huge part of the problem. Okay, I live in Portland and the Oregon Coast is a mere hour and a half away, so technically there is plenty of really good seafood in my area. But I don’t always know where to get it or how to tap into that resource. What my local grocery stores carry may or may not be local or sustainable, and it may not even be very fresh. And there’s a large chunk of you people who live in landlocked states, without any coastal access at all. I think that’s probably the biggest factor in keeping most people from cooking fish at home.

Hazelnut Crusted Sea Bass

Servings: 2 to 3 servings

Buttery roasted sea bass smothered in toasted hazelnuts. A deliciously low carb keto meal ready in under 30 minutes!

Ingredients
 

  • 2 tbsp butter
  • 1/3 cup toasted hazelnuts, (remove as many of the loose skins as you can)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/8 tsp cayenne
  • 2 sea bass filets, (6 to 8 ounces each - the ones from Fulton Fish Online are long thin filets from the whole fish, already cleaned and deboned.)
  • Salt and pepper
  • 2 slices lemon
  • 1 tbsp chopped parsley

Instructions

  • Preheat oven to 425F and place butter in a 9x13 glass or ceramic baking dish. Place the dish in the oven to melt the butter.
  • Meanwhile, combine hazelnuts, salt, pepper, garlic powder, and cayenne in a food processor. Pulse until mixture resembles coarse crumbs with a few bigger pieces of hazelnut.
  • When the butter is melted and bubbly, remove from the oven. Pat the sea bass dry with paper towels and lay them, skin-side down, in the pan. Spoon some of the melted butter from the pan over the filets and sprinkle with salt and pepper. Sprinkle with the filets with the hazelnut mixture, pressing lightly to adhere.
  • Squeeze the lemon slices over the fish and then lay the slices on top. Bake 12 to 15 minutes, until fish is no longer opaque and flakes easily with a fork. Remove and sprinkle with chopped parsley. Spoon the butter from the bottom of the dish onto the filets after you plate them.
