Who says nachos have to be made with tortilla chips? Mini peppers make a great low carb base for your favorite nacho toppings. And it’s kid-friendly too!
My life has been all about the kids lately. I suppose this is typical of the end of the summer/beginning of a new school year transition, particularly when one has a brand new kindergartener that needs a little more hand-holding than the older kids. She was very, very ready for this leap and every day in August would invariably “Am I going to kindergarten tomorrow?”. She was so excited, but on the day of she melted down completely and was a mess of emotions, laughing one moment, sobbing the next. All those jingly jangly nerves got the better of her, understandably. Of course, once she arrived and settled in, she could hardly wait for me to leave so she could play with her new friends. I have to admit, that was a bit tough for me. I may or may not have gotten a little teary. My last one off to kindergarten…
Add to that a seriously insane soccer schedule, with two kids practicing on the same two evenings a week but in different locations, so that I become nothing more than a shuttle and a feeding machine. I drop the oldest off with a large snack, pick the middle child up and get her home and fed, then I drop her off, at which point it’s about time to go get the oldest and bring him home to eat. All with the little kindergartener in tow. You’re tired just thinking about it, aren’t you? Yeah, me too.
So, easy healthy meals that kids actually like are the order of the day. And these nachos made with halved mini peppers were a huge hit. They will be in regular rotation from now on. Who needs tortilla chips when you’ve got mini peppers?
