
I can never get enough crisp, refreshing cucumbers in the warm weather months. I grow my own and I get such joy out of seeing the teeny tiny fruit grow and swell into bright green cylinders of deliciousness. Am I waxing poetic about this summer vegetable? Yes, I am and I feel no shame. Cucumbers make me happy!
And these Cucumber Bites make my mouth happy. They are one of my favorite keto appetizer recipes. Every time I make them, they vanish from the plate faster than I can fill it up again!

When summer rolls around, I find myself craving easy, light dishes that take full advantage of the fabulous summer produce. The great thing about seasonal foods is that they don’t need a lot of dressing up. A little seasoning and perhaps a tasty topping, and away you go.
Some days, I harvest so many cucumbers I can hardly keep up. I make batches of Spicy Dill Refrigerator Pickles and I always bring Thai Cucumber Salad or Keto 7 Layer Salad to parties.
These easy keto cucumber bites have universal appeal so they make a fabulous addition to summer parties!

Ingredients and Substitutions

- Everything Bagel Seasoning: You can buy this already made or make your own blend at home. I’ve provided a recipe below.
- Cucumber: Look for fresh, firm cucumbers that are at least an inch and a half in diameter.
- Cream cheese: Make sure it is room temperature for smoother mixing.
- Butter: This adds a little richness to the filling. You can skip it or sub another ounce of cream cheese.
- Greek yogurt: You can also use sour cream. Either will work as a little is used to thin out the cream cheese mixture.
- Pantry staples: Salt, garlic powder.
How to Make Everything Bagel Cucumber Bites

- Make the seasoning: Whisk all of the everything bagel seasoning ingredients together in a small bowl.
- Prep the cucumbers: Peel alternating strips of skin from the cucumber, then slice into 1/4 inch rounds.
- Make the topping: Beat the cream cheese, butter, yogurt, garlic powder, and salt until well combined and smooth.
- Top the rounds: Attach a star shaped tip to a piping bag and fill the bag with the cream cheese mixture. Pipe decoratively on top of the cucumber slices.
- Garnish: Sprinkle each slice with everything bagel seasoning.
- Serve and enjoy!

Expert Tips
I highly recommend making your own Everything Bagel Seasoning, as it gives you the ability to adjust the amounts of each ingredient to your liking. I like some caraway seed in mine but not everyone agrees! And it stores well in an airtight container so you can keep it around for other recipes like my keto crackers.
Make sure the cream cheese and butter are properly softened for easier mixing. You can beat them with a hand mixer or simply work them in together with a silicone spatula.
While you can prep the cucumber bites ahead of time, the salt can draw moisture out of the cucumber and make them watery. Leave the seasoning off and sprinkle just before you are ready to serve. If you do prep ahead, make sure to cover them tightly so they don’t dry out.

Variations
- Add a little smoked salmon to the top of each bite before sprinkling with the seasoning.
- Use my homemade Boursin cheese to top the cucumber slices and skip the seasoning.
- Pipe on some Salmon Mousse instead of the cream cheese topping.
- Add a little dill and lemon to the cream cheese and top with a halved cherry tomato.
- Top the cucumber bites with guacamole and a little chili garlic shrimp.

Everything Bagel Cucumber Bites
Ingredients
Everything Bagel Seasoning:
- 1 tsp poppy seeds
- 1 tsp sesame seeds
- 1/2 tsp dried minced garlic
- 1/2 tsp dried minced onion
- 1/4 tsp crushed caraway seeds
- 1/4 tsp coarse salt
Cucumber Bites:
- 1 medium cucumber
- 4 ounces (113.4 g) cream cheese, softened
- 2 tbsp (28.4 g) butter, softened
- 2 tbsp (30.43 g) Greek yogurt or sour cream, room temperature
- 1/2 tsp garlic powder
- 1/4 tsp salt
Instructions
Everything Bagel Seasoning
- In a small bowl, whisk all the ingredients together. Set aside.
Cucumber Bites
- Use a sharp knife to peel alternating strips of skin from the cucumber. Slice the cucumber crosswise into 1/4 inch thick slices and place on a platter.
- In a medium bowl, beat the cream cheese, butter, yogurt, garlic powder, and salt until well combined and smooth.
- Attach a star shaped tip to a piping bag and fill the bag with the cream cheese mixture. Pipe decoratively on top of the cucumber slices.
- Sprinkle each slice with everything bagel seasoning and serve.

If you have a cream cheese alternative you like, these are easily made dairy free. Skip the butter, use 5 ounces of the cream cheese alternative, and add a little coconut cream in place of the sour cream. You may want to add a squeeze of lemon juice to give the topping a little more tanginess.
