I’m so thankful for you, and all your keto recipes! When I started exclusively eating healthy I was sad about all the baked goods I’d have to stop making, but now I can still enjoy my love of baking and stay healthy doing it! I did not start quite as early this year because I’m not roasting a whole turkey. We opted for a couple of turkey breasts instead and they cook faster!

Happy Thanksgiving! You’re one of the things I’m grateful for on this Thanksgiving day. When I started eating low carb to manange Type 2 diabetes, there were not as many recipes and ingredients out there. I felt pretty much on my own. I’m grateful for your site and the many recipes that have given me more variety in my low carb diet.
I don’t do “holiday baking” anymore. I don’t have the larg family I used to bake for. It’s pretty much just me, although my son will eat low carb desserts if they don’t taste like artificial sweetener. So I just bake what I need when I need it for myself. 🙂

For my entry answer, when I begin my holiday baking really depends on what I’ll be making. Last year I made keto cranberry sauce about 2 days before Thanksgiving (and it came out awesome). This year I forgot to pick up cranberries, so since it’s just a meal for me (well, actually, a week’s worth of meals), I’m just cooking today… turkey, keto almond flour cornbread, which will be used for the stuffing recipe, and green beans almondine (which I tried out last week for a potluck dinner and they were fabulous). I don’t feel much like eating sweets today, so I’ll probably not make a dessert.
