Do you remember the first time you ever had a mojito? For me, it was love at first sip. That perfect combination of mint and lime together with a touch of sweetness and a kick of rum. Oh my, I get all warm and fuzzy just thinking about it.
They rank up there among my favorite cocktails, along with a good keto margarita. And adding fresh summer blueberries takes them to a whole new level.
I get excited whenever I see fresh local blueberries come into season. I grab a few pints with my Keto Blueberry Muffins or Keto Blueberry Bread in mind. But I always save some for these Skinny Mojitos!

There simply isn’t anything more refreshing on a hot summer evening than a Blueberry Keto Mojito.
Like many cocktails, classic mojitos are made with simple syrup so they aren’t exactly keto friendly. But it’s easy to replace the sugar with your favorite sweetener. You could even skip sweetener entirely, if you love a tart cocktail.
As long as you don’t overdo the blueberries, each skinny mojito has only 5g net carbs per serving. And they’re easy to prep ahead for a party or get together.

- Fresh blueberries: You can also use frozen blueberries, but whatever you choose, make sure they are juicy. You want that gorgeous purple in your skinny mojito!
- Sweetener: Choose a sweetener that dissolves well. You can use allulose, erythritol, stevia, or monkfruit. But if you erythritol, make sure it’s powdered so it mixes in properly. You can also use a pre-made simple syrup such as Sinless Syrups.
- Fresh mint: Mint is a key ingredient to a mojito. Make sure your mint leaves are bright green and tear them before adding them to the glass. This helps release the oils and flavor.
- White rum: White rum is classic in mojitos to give it the light color and flavor.
- Fresh lime juice: Don’t bother with bottled lime juice, it’s never as good. Always squeeze some fresh limes for the best keto mojitos.
- Club soda: You can use sparkling water or seltzer, but make sure it’s unflavored.

Step 1: Combine the blueberries and sweetener in a blender and blend into a thick puree.
Step 2: Tear the mint leaves by hand and add to a pitcher that holds at least one liter. Crush with a muddler or the end of a wooden spoon to release the oils.
Step 3: Add the blueberry puree, white rum, lime juice, and soda and stir to combine.
Step 4: Fill four highball or bucket glasses with crushed ice. Pour the mojitos into the glasses, garnish with blueberries and mint leaves and serve.
Expert Tips
Sweeten to taste. I do not like sweet cocktails so I keep the sweetener to a minimum. But you can taste and adjust as you see fit. Again, as long as you use a sweetener that dissolves easily, you can add more or less once the keto mojitos are assembled.
Use plain white rum for a more classic flavor. Dark rum has a stronger flavor and some flavored rums have added sugar.
If you would prefer a classic keto mojito, leave out the blueberries and add half a cup lime juice. Mix everything directly in the pitcher, stirring well to dissolve the sweetener.
Make it a mocktail. A skinny mojito makes a refreshing non-alcoholic beverage as well. You can either skip the rum altogether, or add a tiny bit of rum extract for flavor. You probably wouldn’t need more than about half a teaspoon for the full batch.

This applies to all distilled spirits such as whiskey, gin, tequila, rum and vodka. Some flavored or enhanced variations do have added sugars so make sure you choose plain rum.
Classic mojitos have anywhere between 10g and 25g of carbs, depending on how much sugar they contain. But these Blueberry Skinny Mojitos have only 6g total carbs and 1 of fiber. That means that they have 5g net carbs per serving.
