I am big on eating big salads. A really good salad for lunch can pack your day full of veggies and help you get the nutrients you need. It also makes you feel virtuous and sets you on the right path for eating well throughout the rest of the day. Done right, they can be utterly delicious and filling too. So those are the pros and they are not insignificant. But the cons can trip you up in your salad-for-lunch quest. You’re busy, you’re on the go, you don’t have time to prep a salad for lunch every day. Even if you do have time, it’s not the most transportable of foods.
