This really is the perfect last minute dessert for the Fourth of July. Or Canada Day (yeah, my fellow Canucks!). Or any old family, friend, or work gathering. 30 minutes, start to finish. No baking, no fussing. Just fun, fresh foods that delight the senses.
Arranged on a tray, these cheesecake filled strawberries are as eye-catching as they are delicious. I brought them to a friend’s party a few weekends ago and they disappeared quickly. And they aren’t just for adults… the kids kept coming back for more too.
Easy Keto Dessert for the Fourth of July
I love all the creative desserts people make for their Fourth of July celebrations. They really do up the old Red, White, and Blue an amazing degree. But I often can’t partake of these treats. So this year I decided to take matters into my own hands.
I was charged with bringing dessert for a friend’s going away party recently. I thought I needed to bring dessert for about 20, so I made some low carb chocolate cookies stuffed with peanut butter (recipe to come soon!). Then I looked at the guest list and realized there were 50 people coming.
Uh oh! I had to think fast. I combed through my many keto desserts but I really didn’t have the time or energy to bake anything else.
Then I spotted these Red White and Blue Strawberry Cheesecake Bites on Cincy Shopper and thought how fun and easy they would be, and they would make a lot. I could jazz up a tray of cookies and little strawberry cheesecake bites for everyone. And make something that would be perfect for upcoming patriotic holidays.
Problem solved!
Tips for Keto Cheesecake Stuffed Strawberries
You will need:
- 1 pound fresh strawberries – try to get ones that are medium to large
- 6 ounces cream cheese
- Powdered keto sweetener – I used Swerve, of course!
- Butter
- Heavy cream
- Vanilla extract
- Fresh blueberries
- Or sugar-free chocolate chips – or both if you want to do some both ways. That’s what I did.
I kept the hulls intact on my berries because I liked the way it looked. You don’t have to do this. I also took a sharp knife to hollow out the center of the berries a bit more. All the better to receive more cheesecake filling, my dear!
Make sure your cream cheese and butter are properly softened before beating. You want a truly smooth filling.
Sometimes heavy cream can make the filling thick. If you find yours too thick for piping, simply add a little almond milk or even water.
My blueberries were on the large side so I could only fit about 2 on each strawberry half. But smaller blueberries would go a little further.
I also did some berry halves with mini chocolate chips. You can use Lily’s easily but I also found these really mini keto chocolate chips from Explorado market that I like a lot for bite-sized desserts like this. They are completely dairy and soy free too, with great flavor.
Now just arrange your sweet little cheesecake filled strawberries decoratively on a platter. Crowd them in there a bit, as it helps to keep them all upright.
Be sure to refrigerate the berries if you aren’t ready to serve right away. They will be good for a few hours at room temperature during the get together or party.
So simple, so delicious, and so fun. What more could you ask for?

Strawberry Cheesecake Popsicles
Keto Cheesecake Stuffed Strawberries
Ingredients
- 1 lb fresh strawberries (larger ones work best)
- 6 ounces cream cheese softened
- 2 tablespoon butter softened
- ⅓ cup powdered Swerve Sweetener
- ¼ cup heavy whipping cream
- 1 teaspoon vanilla extract
- ¾ cup fresh blueberries
- ¼ cup mini sugar-free chocolate chips (optional)
Instructions
- Wash the strawberries but do not remove the hulls. Cut in half through the hulls so a little bit is attached to each side.
- With a sharp knife, cut out the center of each strawberry half to hollow it out a bit.
- In a large bowl, beat together the cream cheese and butter until smooth. Add the sweetener and beat until well combined.
- Beat in the whipping cream and vanilla extract. If your filling is very thick and stiff, add a little unsweetened almond milk or even water (about 1 to 2 tbsp). Fill a piping bag fitted with a star shaped tip.
- Pipe the filling onto the strawberry halves. Top each with two or three blueberries, or a few mini chocolate chips.
- Keep refrigerated until ready to serve.

Just add it as a liquid to lighten the filling. I would specifiy if you needed to whip it separately! 🙂

Hi, I notice you use Swerve for most of your recipes. I cannot stomach the erythritol in any of the newer sugarfree sweeteners. I prefer Splenda. Do you think it would be possible to offer substitution amounts for erythritol products with Splenda? And also to say when Splenda would just not work? Thanks! Your recipes are fantastic!
