I have many talents, but flower arranging is definitely not one of them. I love nothing more than a beautiful vase filled with a perfect bouquet of cut flowers, but I honestly don’t know how people do it. Left to my own devices, my arrangements end up lopsided and scruffy-looking. I either chose a vase that’s too big and they all fall apart from each other, or a vase that’s too small so they are smooshed together. I don’t know how to choose the right leaves and small sprays to help bring out the best in the bigger flowers. I just…can’t do it. For me, it’s one of those arts that’s best left to the professionals.
But I do love them so and they have that magical effect of brightening any room or table. Artfully done (not by me), they can convey the perfect sentiment without using any words at all. I am very thankful that there are people out in the world who are blessed with flower arranging talents, and choose to use their powers for good. And my girls love flowers so I think a small arrangement for each of them might be in order. Much better than a bunch of candy.

You know I love making these mini desserts and this flourless chocolate torte with raspberry sauce is perfect for just two people. Can’t you picture it? Chocolate Torte for Two
Ingredients
- Torte:2 tablespoon O Organics butter
- 1 ounce O Organics unsweetened chocolate chopped
- 3 tablespoon powdered Swerve Sweetener
- ⅛ teaspoon O Organics vanilla extract
- Pinch salt
- 1 large egg
- Raspberry Sauce¼ cup O Organics frozen raspberries
- 1 tablespoon powdered Swerve Sweetener
- 1 tablespoon water
Instructions
- Preheat the oven to 300F and grease an 8 ounce ramekin very well.
- In a medium heatproof bowl, combine the butter and unsweetened chocolate. Microwave on high in 30 second increments, stirring in between, until smooth (you can also melt it double boiler style).
- Stir in the sweetener, vanilla and salt. Add the egg and whisk until fully incorporated. Pour into the prepared ramekin and bake 15 to 20 minutes. The sides will be set but the center will still be jiggly.
- Remove and let cool completely, then refrigerate for at least 1 hour.
- Meanwhile, combine the raspberries, sweetener and water in a small saucepan. Bring to a simmer and cook until the berries are soft enough to be mashed. Mash them up and let cool.
- Loosen the edges of the torte with a sharp knife and flip out onto a plate. Drizzle with raspberry sauce and serve.

Made this last night for a late valentine dinner with my hubby. I used two ramekins. They were delicious! The only issue I had was they stuck a little bit, so I’ll double grease next time. The raspberry sauce was amazing! Another success Carolyn 🙂

What size ramekin did you use? And it’s not supposed to be done in the middle, it’s supposed to be very loose. Then it firms up as it chills and it becomes dense and fudgy.

I used a 4 inch Springfield pan. I should clarify, when I stated the middle was not done that was after setting up in the fridge for over an hour. It was very thin, almost like a molten lava cake. As I said before, we did eat it and it was delicious! Just not sure why it did not rise. Thank you for your response!

Not in this recipe, no. There are conversions for unsweetened chocolate to cocoa powder but they require more oil. You could follow that.

Each tbsp of butter is 102g. An egg is 80g. An ounce of chocolate is almost 150g. And the berry sauce is included here.

My husband and I have sweet tooths and have have stopped eating sugar for about 9 months now. I don’t make desserts w/ artificial sweeteners because we don’t like the taste. I have not heard of Swerve sweetener. What is it and does it have a strange taste? Of course, I realize everyone has a different idea of taste. Thanks!

Swerve is not artificial, it’s made with erythritol. It’s also non-GMO, unlike many sweeteners. For me it has zero aftertaste.

We just had this for our anniversary dinner. We put it into three ramekins and had it with whipped cream and some fruit and it was just wonderful. Tell people that if the butter separates from the cakes during baking, it will all absorb together again while it’s cooling, so don’t worry!
