Every Christmas I make goodie boxes for the neighbors or the educators in my school. In those containers are butterscotch hay stacks, chocolate haystacks, oreo cream cheese balls, oatmeal chocolate chip cookies, and fruit cake cookies!!! It’s one of my favorite times of the year because I love baking, I get to spend time with my mum, and the boxes make everyone so happy 😀

I always make my Great Grandmothers fudge for Christmas, and due to tradition it will probably never be low carb, but if I can figure out how to make it using Swerve and Stevia I will be able to eat more of it than I can the traditional way. My favorite items to bake are my grossmama’s linzer torte,cinnamon stars, and crisp vanillekipferl. Every Christmas we would receive a huge box of these Austrian cookies from our grossmama. Her cookie boxes made Christmas more special than ever because they were baked with such love. These cookies were always made with nut flours, eggs, some sugar, and lovely butter.
It is wonderful and comforting to keep my grossmama’s much loved baking tradition with my children. These baked goodies are already low carb, and grain free, and now sugar free because I substitute Swerve for the sugar. They are as tasty as ever!
There is comfort in every bite that warms from the inside out.
