I’ve come to the conclusion that I don’t cook nearly enough fish at home and I am aiming to change that. My problem isn’t that it’s hard or intimidating. In fact, cooking fish is deceptively easy and that may be where the fault lies. If I mess up fish at home, it’s usually because I thought it would be harder and need more done to it, when it really just needed a simple sauce and a simple cooking method. Good, fresh fish is best treated with a light hand…some salt and pepper, some herbs, some lemon, and perhaps a little butter. It cooks quickly and easily, and unlike meat, you can always tell when it’s done. That telltale flakiness is a dead giveaway. So really now, why don’t I cook more fish at home?
I think for a lot of folks, accessibility to good, fresh fish is a huge part of the problem. Okay, I live in Portland and the Oregon Coast is a mere hour and a half away, so technically there is plenty of really good seafood in my area. But I don’t always know where to get it or how to tap into that resource. What my local grocery stores carry may or may not be local or sustainable, and it may not even be very fresh. And there’s a large chunk of you people who live in landlocked states, without any coastal access at all. I think that’s probably the biggest factor in keeping most people from cooking fish at home.
Well, I am delighted to share with you a new way to access really fresh seafood, without having to hop in your car and head to the coast. In fact, you don’t even have to leave your home! The iconic Fulton Fish Market, a well known institution in Bronx, NY has just launched their online FultonFishMarket.com. Now anyone anywhere in the contiguous US states can get some of the freshest seafood delivered right to their door.
Fulton Fish Market, a 194 year old fish market and the 2nd largest in the world, is known for its dedication to quality seafood. 1 to 2 million pounds of freshly caught seafood cross their threshold every night. EVERY NIGHT! And all of their fish is guaranteed sustainable. But you don’t have to go there to enjoy the benefits. Their experienced fish mongers will pick out your selections and even portion it up for you. All you have to do is make your choices, click a few buttons, and your seafood arrives exactly how you ordered it, cleaned and ready to cook.
They also offer another great way to access fresh seafood: Community Supported Fishery. This is similar to a CSA in that you purchase a “share” in the fishery and every week, you receive some fresh seafood at a convenient pick up location. Just $18 a week gets you a 2 portion share. If you would like 2 shares, you would pay $36 a week and receive 4 8 oz portions. Each CSF cycle is a 13 week commitment. For full details about this program or to start one in your area visit http://bit.ly/2cWlkRR. Click on the FAQ at the top of that page for the full CSF details.
Now that I’ve caught your attention like a hungry fish on a hook, I am also delighted to tell you that we are hosting a wonderful giveaway for FultonFishMarket.com. First prize is a $250 gift certificate for their online program, and two runners up get $50 gift certificates. You like fresh fish, you know you should eat more of it…come and enter.
Also, First 100 to email contactus@fultonfishmarket.com and say they would like to taste the difference will receive a code good for a $25 credit and free shipping. Grab it while it’s fresh!
Hazelnut Crusted Sea Bass
Ingredients
- 2 tablespoon butter
- ⅓ cup toasted hazelnuts (remove as many of the loose skins as you can)
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
- ⅛ teaspoon cayenne
- 2 sea bass filets (6 to 8 ounces each - the ones from Fulton Fish Online are long thin filets from the whole fish, already cleaned and deboned.)
- Salt and pepper
- 2 slices lemon
- 1 tablespoon chopped parsley
Instructions
- Preheat oven to 425F and place butter in a 9x13 glass or ceramic baking dish. Place the dish in the oven to melt the butter.
- Meanwhile, combine hazelnuts, salt, pepper, garlic powder, and cayenne in a food processor. Pulse until mixture resembles coarse crumbs with a few bigger pieces of hazelnut.
- When the butter is melted and bubbly, remove from the oven. Pat the sea bass dry with paper towels and lay them, skin-side down, in the pan. Spoon some of the melted butter from the pan over the filets and sprinkle with salt and pepper. Sprinkle with the filets with the hazelnut mixture, pressing lightly to adhere.
- Squeeze the lemon slices over the fish and then lay the slices on top. Bake 12 to 15 minutes, until fish is no longer opaque and flakes easily with a fork. Remove and sprinkle with chopped parsley. Spoon the butter from the bottom of the dish onto the filets after you plate them.

I do love fresh fish, but like you, don’t prepare it as much as I’d like. One problem is getting my hands on really fresh fish. My favorite is haddock, which my dad used in his fish and chip shop in Scotland; just the flakiest, tastiest white fish I’ve had. Your recipe looks fantastic, and the FFM sounds like a fabulous way to get fresh fish into the kitchen on a regular basis!

I had sea bass long ago when my dad, brother, and I would go deep sea fishing on one of those boats that take you out specifically for that. It’s pretty good, but I haven’t had it in forever. I love fish, and crab, but we don’t eat it all too often, so I’d love to win this and get some fresh!

Darn does that Bass look moist and delicious! Great job! You are so right, cooking fish is so easy and takes a light hand. Some of the best fish I ever had was in Antigua, pulled out of the see, thrown on a hot grill and dressed with butter lemon & seasonings. I still dream of those days BECAUSE of the fish!

Yes! People should definitely be eating more fish! This sounds wonderful. I’ve never tried cooking sea bass myself, or coating fish with hazelnuts…but I like fish and I like coating it with nuts so I think I would enjoy this!

I agree totally with this, I should eat more fish but am totally intimidated by it. Thank you for gently showing us how to step out of our comfort zones and incorporate more fish into our diet. <3
