My local Kroger store is Fred Meyer, and I love their in-house Simple Truth brand. It offers competitive prices on a great many healthy and organic food items and natural household items. And with the digital coupons, I found I could load up on some of my go-to ingredients: grassfed beef, organic cheese, nuts, chicken, coconut oil, eggs, etc. There are also quite a number of other brands in the digital coupons, ones that we low carbers use frequently (Silk and So Delicious, among others). So if you have a Kroger store near you, this is definitely a cost-saving measure! (Participating stores include: Kroger, Fred Meyer, Fry’s Food Stores, QFC, King Soopers, Ralphs, Smith’s, Dillons, Bakers, Gerbes).
I’ve been doing this healthy low carb thing for quite some time now, and my trick is to still include sweets and treats, provided that they fit the low carb lifestyle. There something about that little taste of dessert that caps off my day and makes me feel satiated. So with some of my Fred Meyer goodies, I set about making over a classic, Pecan Tassies, into something I could eat and feel good about. Until recently, I had no idea what tassies were. Really they are just kind of little pecan tart that uses cream cheese in the crust. I have a longstanding love affair with pecan tarts and pies, so making a healthier sugar-free version was just what the doctor ordered.

Mini Pecan Tarts
Ingredients
Crust:
- 2 cups almond flour
- ⅓ cup powdered Swerve Sweetener
- ½ teaspoon salt
- 6 tablespoon butter melted
- 3 ounces cream cheese cut into chunks
Filling:
- ½ cup chopped toasted pecans
- ¼ cup butter
- ⅓ cup powdered Swerve Sweetener
- 1 teaspoon Yacon syrup or blackstrap molasses
- 2 tablespoon Sukrin fiber syrup (optional, helps with gooeyness)
- 1 teaspoon vanilla extract
- 2 tablespoon whipping cream
- 1 egg
- ¼ teaspoon salt
- 24 pecan halves
Instructions
Crust:
- Preheat oven to 325F.
- In a large bowl, whisk together the almond flour, sweetener, and salt. Stir in the melted butter. Add the cream cheese and cut in with a sharp knife or pastry cutter until the dough looks unified and comes together easily.
- Roll the dough into 24 balls and press into the bottom and up the sides of a mini muffin pan (if your pan is not very non-stick, you may want to grease it first). Bake 10 minutes.
Filling:
- Fill the tart crusts with about 1 teaspoon of chopped pecans.
- In a small saucepan, melt the butter over low heat. Once melted, stir in the sweetener, Yacon syrup, fiber syrup, vanilla extract, and whipping cream until well combined.
- Whisk in the egg and salt. Divide mixture evenly among tarts. Top each with a pecan half and bake another 15 minutes.
- Let cool 15 minutes before removing from the pan.

I will definately have to try this recipe, as I surely miss pecan pie on this WOE. Out west here, we have Smith’s, which we shop at weekly (or more). Love all the low carb choices they have and the Simple Truth line of products we love, don’t have to worry about added ingredients! Simple Truth Tomato Bisque Soup and Organic Chicken Broth both rule! In all honesty, Simple Truth, Private Selection and the Kroger Branded products are all high quality. I prefer these brands over the name brands. Smith’s is our family’s go to market!

Green giant frozen veggies are a great freshness time saver from Kroger and the Silk Almond is a staple at my house. One of our local Kroger stores is the biggest I have seen anywhere. All freshest produce, deli with cheeses is tremendous. Seafood section is to die for. It’s a mega store.

I LOOOOOOOOVE Kroger! I used to think they were the most expensive store in town (Norfolk, VA), but now I do 99% of my grocery shopping there!!! I buy my almond flour there and it always seems when I need more, they have it on sale! I have gotten quite a few people at work hooked on shopping at Kroger as well…they tell me all the time about how much they save by shopping there now…I am a definite Kroger Girl and am loving that they keep adding more and more products that fit my Low Carb, High Fat lifestyle!!!

I saw that after I posted when I looked closer at the ingredients. After I looked more closely into Yacon I ordered some as I can see the benefits of adding it into my diet. I have the Sukrin Clear and gold, would use gold for this is my guess.

Here in Arizona Krogers is Smiths [or Smiths is Kroger]… at any rate I, too, like these brans [their low carb yogurt, too], and their almond flour is a great price and I find it is as fine as what I’ve been getting from Honeyville. I still buy Honeyville, but I also buy the Simple Truth brand almond flour too…. much finer than Bob’s Redmill which is more expensive.

Well, $5.99 a pound in a regular grocery store is quite good. You can get it more inexpensively direct from a farmer but you have to buy in bulk (like buying 1/4 cow) and that requires freezer space!

We don’t label beef as grass fed or not where I live, so it’s difficult to do a fair comparison. But $5.99/lbs is pretty much exactly what we pay for organic beef, which is pretty close I guess 🙂

A couple of questions: Can you make the crust in a food processor instead of cutting in by hand, did you use the gold or clear sukrin syrup, and did you find the syrup affected your blood sugars(sukrin’s website warns that this can happen in some individuals)? These are one of my favorite high carb desserts so would love to try a low carb version. How do these and your butter tarts compare? They seem similar. Thanks for all you do.

I am sure you could use a food processor, I used the Gold (it’s linked in the recipe) and it’s such a small amount spread over 12 servings that no, I did not find it affected my blood sugar.
