Creamy, dreamy low carb pumpkin tiramisu. This is keto dessert heaven!
Whoomp, there it is. Done and done. Finito. Stick a fork in me (or you), because we are both done. You are now looking at the ultimate low carb pumpkin recipe of 2016. No need to look any further for delights of the pumpkin spice variety because it is staring you in the face. Right here, right now. And it’s absolutely heavenly. Just ask the eight friends of ours who were over for a Labor Day get together how good this is. Oh and some of their kids too. This puppy went down like fog, as my husband would say. There was utter silence as it was devoured. Well, a silence that was punctuated by the occasional sigh of delight and satisfaction. That’s the kind of silence that is music to my ears.
I collect recipe ideas like other people collect stamps or coins. I hoard them and I secret them away in any number of places. Most notably, my secret Pinterest board for “Makeover Recipes”. It’s a private board just for me, where I stick any and all yummy looking recipes that I think are good candidates. These are usually mouthwatering high carb treats that I think have potential to be made low carb. Last year, I came across a number of pumpkin tiramisu recipes and I thought it was a fantastic idea. But I didn’t have time to make my own healthier version before pumpkin season was through.
So it was one of the first things I did when the calendar changed from August to September. And I am so happy I did. You will be too!
