That slow cooker of mine has become a well-loved kitchen tool. It wasn’t long ago that I eschewed most slow cooker or crockpot recipes, thinking that they weren’t very good and resulted in flavourless, tough meats and over-stewed vegetables. I know now that this was largely due to my old crock pot, which wasn’t very good and always gave off a funny smell when it heated up. Now that I own a better slow cooker, I can see the appeal in using it for anything and everything. I still love to use my oven, my stove, and my grill, but popping some ingredients into the slow cooker and walking away can make dinner prep a snap. It also happens to be VERY useful for desserts, as evidenced by my penchant for creating low carb slow cooker cakes.
And now it turns out to be quite useful for making low carb bread, too. Cauliflower bread, to be specific. I saw a cool recipe for a crockpot cheese pizza with cauliflower crust and felt very inspired to try a version of it myself. I found the basic batter a little too wet, so I added some coconut flour to help absorb the extra moisture. I also added more cheese to the batter to help it hold together a little better. I sprinkled it plenty of minced garlic and topped it with more cheese and then let it cook away! The results were delicious and it was so easy to make. Another win for the slow cooker!

Did u line your slow cooker with parchment paper to get the bread out more easily?

No, if you read the recipe to the end, you will see that you cut it into pieces to get it out. If you line it with parchment, it won’t get as crisp on the edges and will be more soggy in the middle.

I made this tonight and my husband and I really enjoyed it! I didn’t measure the cauliflower and think I may have added too much. It was not bread like more like cheesy cauli rice. But it was delicious and super easy.

I never tried to freeze it. But the leftovers should be kept in the fridge and are good for a few days.
