Do you remember the first time you ever had a mojito? For me, it was love at first sip. Or maybe it was darker than that. Total obsession at first sip. That perfect combination of mint and lime together with a touch of sweetness and a kick of rum. Oh my, I get all warm and fuzzy just thinking about it.
They rank up there among my favourite cocktails, along with a really dry martini and a good margarita. There simply isn’t anything more refreshing on a hot summer evening than a really good mojito. Whoever invented it deserves my utmost admiration. Cheers to you!
I’ve made my own share of mojitos over the years, some good, some not so good. It took a while to perfect the right combination of sweetness to the tart lime and the fresh mint. I think I finally got it right while on a trip to Martha’s Vineyard.
How to Make Low Carb Blueberry Mojitos
Three women and 6 kids sharing a house on the island for a week, and I brought something like two pounds of limes over from the mainland to practice with. My roomies (the adult ones) were not unhappy with that arrangement and we would take a large mason jar filled with them to our daily late afternoon beach jaunts. But don’t tell the Martha’s Vineyard police, as I am pretty sure we weren’t supposed to drink in public. It is puritan Massachusetts after all!
But that was my pre-prediabetes days, so my love for mojitos took a backseat for a while there. The problem is that the best mojitos are made with simple syrup and that’s not so simple when going sugar-free. The sweetener I love best (Swerve) doesn’t like to be boiled into solution and tends to recrystallize out as it cools, which isn’t so great for cocktails. I did do a mojito recipe a few years back that was quite good but it was made with Honest Fizz, a soft drink that’s already sweetened with erythritol and stevia.
Still, I saw had a large basket of fresh blueberries the other day and they were just begging me to tackle blueberry mojitos. Begging, I tell you. And I felt I was up to the challenge. I decided to skip the simple syrup altogether and blend the blueberries up with some powdered Swerve and only then mix it into the rest of the ingredients. And you know what? They were perfect, just perfect. I guess simple syrup isn’t a requirement after all!
Low Carb Blueberry Mojitos
- ¾ cup fresh blueberries
- 3 to 4 tablespoon powdered Swerve Sweetener (depending on how sweet you like it)
- ¼ cup packed mint leaves
- 1 cup white rum
- ⅓ cup fresh lime juice
- ½ liter club soda
- Blueberries and mint leaves for garnish
- In a blender, combine blueberries and powdered sweetener. Blend to a thick puree. Transfer to a pitcher.
- Tear mint leaves by hand and add to a pitcher that holds at least one liter. Crush with a muddler or the end of a wooden spoon to release the oils. Add blueberry puree, white rum, lime juice and soda and stir to combine.
- Fill 4 highball or bucket glasses with crushed ice. Pour mojitos into glasses, garnish with blueberries and mint leaves and serve.
