Make no mistake, my friends, these are not breakfast waffles. No, no, these beauties are pure dessert territory! Unless you are sometimes inclined to eat dessert for breakfast. Which I am – I am very much inclined to eat dessert for breakfast sometimes. I never did it before going on a low carb diet because that just seemed too unhealthy and indulgent. I was a good girl, I always tried to start my day right with a wholesome breakfast like toast with peanut butter and a piece of fruit. If only I knew back then what healthy really was. If only I had even the slightest clue what all those “healthy breakfasts” were doing to my blood sugar. I might as well have been eating dessert for breakfast.
But now I look at my low carb breakfast muffins and I look at my low carb dessert recipes and I realize there really isn’t all that much difference. The desserts might be a little sweeter and a little gooier, and tend a little more toward the chocolate variety. They might be a little fancier and have more layers, because they are dessert after all. But they are also sugar-free and grain-free and they won’t send your glucose into the stratosphere. In those respects, they are far healthier than many breakfast options.
As a general rule, I do try to keep my sweet treats as just that: treats. But rules are made to be broken, at least on occasion. So although I made these low carb Brownie Batter Waffles as dessert, I won’t lie. I did spread one with peanut butter one morning and eat it for breakfast. And I don’t regret it one little bit.
