What is there for me to say about scones that I haven’t already said? There are no less than 17 scone recipes here on All Day I Dream About Food and I have a tendency to wax poetic about this seemingly basic pastry from the British Isles. I don’t quite know what it is about them that I love so much. A good scone is on the dry side, perhaps even a little bit crumbly, a characteristic you usually would distain in other baked goods. But it’s still somehow tender at the same time. And it’s absolutely perfect paired with your morning coffee or tea.
When I was little, my mother often made oat scones for Christmas morning. We slathered them with maple butter and we would munch happily on them while opening our stockings. So scones offer me a feeling of comfort and coziness, of special times with loved ones, as well as great flavour.
I adore coming up with new scone recipes and these low carb Toffee & Chocolate Scones were a huge win. To my great pleasure, the sugar-free toffee bits stayed together inside the scones and didn’t melt into nothingness, so there was a little sweet crunch going on. And since English Toffee is a favourite holiday treat on this side of the pond, these seem like a perfect holiday brunch item. I hope my kids get the same feeling of comfort and coziness when I serve these on Christmas morn.
