I love this time of year, when so much produce is coming into season and I can stock up on a variety of fresh fruits, veggies and herbs. It’s so wonderful to have fridge stocked with healthy items so I can whip up a big salad or some other fresh meal whenever the mood strikes. And while the mood strikes often, I find that I have to put in some effort to use it all up quickly. Good fresh produce doesn’t last very long and it often starts to spoil before I can keep up with it. I try my best, feeding my family as many vegetables as I can every day. It’s a good things my kids like salad, because we eat a lot of it at this time of year. And it just so happens that May is National Salad Month. How fitting!
There are a few items in particular that I find start to go too quickly, no matter how carefully I wrap them up. Lettuce is one culprit, starting to wilt and turn brownish within a few days. Berries, especially organic ones, start to go moldy very quickly. And fresh herbs like cilantro and basil – oh man, those two herbs are my refrigerator nemeses. You have to buy a whole bunch, you can’t just get the little bit that you need for an individual recipe. And then the rest languishes, becomes soggy, goes brown and wilted and sometimes becomes a pool of green goo in the bottom of the vegetable drawer.

Strawberry Avocado Caprese Salad
Ingredients
Salad
- 1 cup quartered strawberries
- 1 cup bocconcini small fresh mozzarella balls, halved
- 1 avocado chopped
- ½ cup grape tomatoes halved
- ¼ cup fresh chopped basil
- Salt and pepper to taste
- 4 cups fresh spinach or other salad greens
Creamy Balsamic Dressing
- 3 tablespoon avocado oil or olive oil
- 3 tablespoon mayonnaise
- 2 tablespoon red wine vinegar
- 1 ½ tablespoon balsamic vinegar
- 2 cloves garlic minced
- ½ teaspoon dried oregano
- Salt and pepper to taste
Instructions
Salad:
- In a large bowl, toss together the strawberries, mozzarella, avocado, avocado, basil and tomatoes.
- Divide salad greens between four plates and top with the caprese mixture.
Dressing:
- Place all ingredients in a glass jar and shake until well combined.
- Drizzle over salad and serve.

I love summer salads, so it’s hard to pick just one. But the salad I make most often has: strawberries, red onion or shallot, cucumber, fresh mint, salt, pepper, olive oil, balsamic vinegar, and some type of fresh greens (arugula is my prefered green). I also had a little liquid stevia, but sugar can be mixed into the oil and vinegar.

I need these FreshWorks Produce Savers in my life! Cilantro is something I dearly love, but I end up losing more than half of it to the dreaded mushy slimy mess they become after sitting in the fridge more than a few days or so.

I prefer salads filled with black and green olives, marinated artichokes, green olives stuffed with garlic and jalapeno and marinated mozzarella balls with either Ceasar or Ranch dressing.
I keep organic or conventional leaf lettuce fresh and crisp for 6-8 weeks in my frig. I rinse it in cold water, then put in my salad spinner to dry, then place in a large ziplock baggie with good paper towels on both outside edges. It absorbs the moisture..If they become damp, replace with new towels. Also, place the bag in the warmest location in the frig. Mine is about eye level on the right side. I can put it elsewhere and it’ll freeze or wilt.
