Sometimes you just crave chocolate cake, and nothing else will do. Nothing but keto chocolate cake with rich chocolate frosting, or a drippy chocolate glaze. I feel you! Monday is my birthday, and for possibly the first time in my dieting life, I am not saying “Oh, it’s my birthday, so I deserve to go off-plan.” I mean, it helps that going to a great restaurant is not an option, but in truth, I’m just as happy eating my low-carb food, which is delicious.
But birthdays, in my book, need a cake, so I’m making the chocolate cake with whipped ganache frosting that you developed for Swerve. In fact, I don’t like Swerve — Erythritol-based sweeteners linger in the mouth for me in a really unpleasant way — so I was delighted to see that this recipe calls for unsweetened cocoa and unsweetened chocolate, meaning I can use BochaSweet, which I like a ton. The ganache on its own is quite bitter (perhaps I needed to add more BochaSweet) so my plan is to us it to frost only the sides, and layer the insides with both the raspberry-chia jam that I made from your recipe — LOVE! LOVE! — and some vanilla Swiss meringue buttercream. I think it will be delicious, and I will give the leftovers to my friend who has two ravenous (and skinny) teenage sons.

Carolyn, I love your blog! Over the holidays, I made “death by chocolate cheesecake” three times for three separate Christmas parties. I thought the first effort was perfect. However, for the second and third cheesecakes, there was significant granularity and more of a cooling effect. I used swerve all three times. What can I do to avoid this problem in the future? I am not really sure why it would do that as it’s never happened to me. You may want to cut back on the Swerve a bit and use stevia to help sweeten.

Have you tried using the powdered swerve product? I have been told that the granular product does not dissolve as well. Personally, WE LOVE SWERVE, across the board!

Try Allulose. I use it when baking and prefer it because there is no cooking effect whatsoever. It’s 70% as sweet as sugar. May need a tad more than swerve or you may just like it as a 1:1 substitution. It’s keto approved but a bit more expensive. Carolyn’s suggestion does help a bit too.
