So I’ve been cranking out the low carb Thanksgiving recipes early this year, so I can at least say I had some lovely home-cooked dishes, even if it’s not on the actual Turkey Day. And this stuffed turkey breast recipe is a serious winner and perfect for small families who don’t want to cook a whole ginormous bird. It was perhaps the most flavourful and moist turkey breast I’ve had in years and that’s saying a lot. I would easily consider making this my go-to turkey recipe and skipping the rest of the bird from now on. It was that good.
I developed the recipe because I was asked to try out these Pop-Up® Disposable Cooking Thermometers from Volk Enterprises. I have to say right off the bat how impressed I was with these unassuming-looking little timers. Can I even confess I didn’t quite trust it to work that well? I kept checking on the roast, worried that it was overcooking and that the timer wouldn’t actually pop. But pop it did, and when I tested out the internal temperature with another instant-read thermometer, it has reached 180F exactly as the Pop Up timer promised.
There are a whole range of these Pop Up® disposable cooking thermometers, ranging from 138F to 203F and they certainly take a lot of the guesswork out of cooking turkeys and other roasted meats. And astonishingly, they are even more accurate than most traditional probe cooking thermometers, as they are within +/- 2 degrees of accuracy. Because you are simply looking for the visual clue of the popped timer, you don’t have to constantly haul your turkey out of the oven to check on it. You have garlic in the ingredient list not in the instructions. Do you sauce the garlic with the mushrooms?

Had a lot of sage in the garden this year (my compost must have been really powerful I guess) so I can make this often. I freeze shredded sage with evoo and keep it for use after the garden is gone for the winter. Making for combo Thanksgiving/Anniversary dinner. Found these timers at Trader Joe’s here .

I asked the same question, Stephanie. When I agreed to the campaign, I thought that they were things you could just purchase anywhere but it sounds like they are mostly just sold IN the turkeys and meat. There are other brands of them, but I am not sure they are as good. They do sell them at select stores but they don’t have a store locator. Sorry 🙁

Oh, that looks like just the ticket. no one will be coming home for Thanksgiving, so it will just be us 2. Good luck on the move, moved MANY times as a kid and they were all exciting! I can especially remember swimming on Christmas at the hotel when we moved to LA. : )
