Well hello there! Come on in, so good to see you. Happy holidays and best of the season. Isn’t this chilly weather something? Here, shake the snow off your boots and come into the warm house. Mind you don’t track in any muck, though, I just cleaned the floors. No, really, it’s so lovely to see you, so glad you could join us. We love having friends and family around on the holidays. Let’s celebrate in style! With a low carb champagne cocktail, naturally. That tart-sweet cranberry flavour goes perfectly with the bubbles.

And if you’re like me, you’re still working on finalizing the menu, wondering if you should make one more goodie for the dessert table. Or maybe you’re going to someone else’s house and you’ve been charged with bringing a dish or two. And of course, you want things to be low carb so that you can have something to enjoy.

But don’t worry, this won’t take much of your time. In fact, this is one of those ridiculously easy recipes that is bound to impress. Lots of bang for your buck, my friends. And sipping this can’t help but get you into the holiday spirit. Just look at it…all fizzy and bubbly, pink and festive. And sugar-free, of course!

It’s a perfect last minute holiday recipe; you won’t regret putting this on the menu. And at only 4g net carbs, you can afford to indulge a little!

Ingredients
 

Instructions

  • In a large saucepan over medium heat, combine the cranberries and water. Bring to a boil and cook until the cranberries have popped.
  • Pour into a sieve set over a bowl and press on the solids to release as much juice as possible. Stir in the sweetener and orange extract and chill 1 hour.
  • For the cocktails, add 2 tbsp cranberry juice and one tablespoon of vodka to each champagne glass. Top up with chilled champagne.
  • Garnish with a rosemary sprig and fresh cranberries, if desired.

  7. Greetings! I read through the recipe for this and I’m a little unsure how to do. After boiling the cranberries in water do you discard the water? Then squeeze juice out of the cranberries and mix in sugar vodka and champagne? Maybe I missed something. Thank you.

    1. No… you pour it all into the sieve, water and berries, and press on it until all the juice has gone into he bowl under the sieve. The only thing you throw out are the berry skins left in the sieve.

    I’m not much of one for drinking alcohol, but that sweetened cranberry juice looks like it would make a great syrup for adding to sparkling water.

        I made this over the holidays and it is absolutely delicious! I also love to use the homemade cranberry juice without the spirits and add a little bit to my seltzer. My husband loves it as well, so much so I’m making another batch today. I’m curious though, what is the nutritional information for just the juice without the Prosecco and vodka?
        Also, is there anything that the leftover cranberries can be used for? I hate tossing them out. I can give them to my chickens I suppose, but I it would be great if I could use them in something else????

          Perhaps add sweetener to the cranberry skins, spread in a thin layer on parchment paper and put in low temperature oven until the cranberry skins dry out — making it cranberry leather. (I like my cranberry sauce smooth, so after I press the cooked cranberry sauce mixture through the sieve, that’s what I do with the pulp/skin that’s remaining.)
