Have you ever stopped to consider the fact that we don’t eat soup for breakfast? Occasionally for brunch, maybe, but never really for breakfast. You don’t go into work and tell your coworkers what an awesome bowl of soup you ate before you arrived. You don’t see commercials of families waking up to the delicious smells of a simmering pot of bisque or chowder. Soup just isn’t considered breakfast food. Why is that? Why are we so conditioned to think of soup as lunch or dinner? Honestly, if you think about it, it makes little sense. Breakfast is supposed to be the most important meal of the day and soup can be so incredibly healthy, why not start the day with a big bowl packed full of veggies and other wholesome goodness? And if you have to crawl out of a warm bed into a frigid house, soup is the perfect way to warm up and wake up. Seriously, folks, I am on to something here!
But the truth is that I didn’t make this soup for breakfast. I made my first foray into the Portland farmer’s market scene last Saturday and picked up a lovely bag of hedgehog mushrooms, a variety unknown to me. They are lovely small golden mushrooms with a mild chanterelle flavour and apparently they appear in January in the Pacific Northwest. Imagine that! Perfect timing. I honestly didn’t quite know what to do with them but it’s been chilly here lately and soup was high on the list. And when I spotted a container of crème fraîche at Whole Foods the other day, a recipe started to take shape in my mind.
So I made a big batch for dinner and it was divine. Velvety smooth and creamy, with that wonderful earthy flavour that only mushrooms can impart. And then, when we had leftovers, I ate some for breakfast. Well, I ate some as a mid-morning snack and found it incredibly satisfying. Hence my epiphany about soup as breakfast food. We need to start a trend, people. Fill those cereal bowls with soup and I promise you, you won’t regret it!
