This one goes out to all the mothers out there, new and old. Do you remember what it was like to bring home a newborn? Remember the absolute chaos and confusion and complete exhaustion? Remember not knowing if was day or night as you set your life to the rhythms of feedings and diaper changing? Remember holding that tiny helpless little creature in your arms, humming or singing or rocking to soothe its disquietude? And those times you were unable to soothe your sweet little one, the frustration of not knowing what he or she wanted. But surely, as the mother, you must instinctively know what the baby wants, right? Except you don’t and you feel that you must be the most inept mother on the planet. Oh, I love babies well enough but I don’t miss those days!
And then you do it for a second time, and maybe a third or fourth. You think you’re an old pro and things will be so much easier this time around. And they are, in some ways. But in others…not so much. This baby is an individual, with its own wants and needs and idiosyncrasies. On top of that, you have another child to care for, who may or may not resent the intrusion of the new baby. Most of them do resent it a little and start acting out a bit in ways you didn’t expect. Your older angel child suddenly starts pouting and whining, just to get a precious slice of your attention.
Let’s face it, having children is hard. Yes, it’s magical and amazing and all that, but it’s very hard. So when a mum-to-be asks you for a favour, you step up without hesitation. Because even if your kids are grown and have their own families now, you remember those times like they were yesterday. Which is why I created this simple but astonishingly delicious salad for my friend Alyssa of EveryDay Maven. Whipped this up in less than 5 minutes (not including thawing the shrimp ;). Very creamy, spicy and delicious! Perfect for those nights I get home after dark and don’t want to put a lot of time into cooking. Loving your recipes!

Boy, that does bring back baby memories! My first was the colicky one and then super active, always moving and getting into stuff. When she was 3, I had another and he was so quiet and laid back, just watching the world go by, I thought there was something wrong with him!!
