One thing I love about moving to the Pacific Northwest is the deep interest in food, where it comes from, and how it’s grown. This is a growing sentiment in many parts of the country, and indeed the world, but it is very present here, very prominent, maybe even a little in-your-face. I daresay that the rest of the country is lagging behind, and it’s exciting to be in a region that is embracing sustainability with such passion and pushing the envelope to get real food on people’s tables in innovative ways. I don’t pretend to be one of the innovators, I am just along for the ride. But I support it wholeheartedly.
However, one of those innovators does happen to be a dear friend of mine. Janelle Maiocco is the CEO and founder of Barn2Door, a Seattle based company that aims to get wholesome food right from the farm to your…you guessed it…door. It is, in essence, an online marketplace for farmers and growers to sell their meats, vegetables, and other fresh foods. Right now, the service is geared mostly toward the Seattle area, but the intent is to grow to nationwide (Portland is the next market!). And they already have many sellers who are willing to ship their products all over the US.

Janelle and her team are exceptionally passionate about sustainable, local foods. Janelle even runs her own urban farm at her Seattle home, replete with chickens, rabbits, and as much produce as she can grown in her front and back yards. But the Barn2Door team recognizes that it’s not always easy to connect growers with consumers. Farmers are often so busy farming, they have little time to market and sell their wares beyond a few local farmers markets. The Barn2Door concept aims to make the connections between farmers and buyers easier on both sides.
So I am delighted to support such a mission and to bring you a recipe made with the wonderful smoked salmon from Drifter’s Fish from the Barn2Door website. If you love smoked salmon like I love smoked salmon, you need to consider getting ahold of some of this. It’s not the thin nova lox-style, but chunks of smoky fish delicious packed tightly into jars. I’ve been eating it straight out of the jar with a fork, but I decided I had to make you something with it before it was all gone. These rolls make a delicious appetizer. But you might be tempted to eat the whole plate by yourself. I certainly was!

Smoked Salmon Cucumber Rolls
Ingredients
- 8 ounces cream cheese softened
- 6 ounces smoked salmon minced, if you have the sliced variety
- Juice of one lemon
- 1 tablespoon minced fresh dill
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground pepper
- 1 English cucumber ends trimmed and very thinly sliced lengthwise (using a mandolin works best)
- 1 to 2 tablespoon capers
- Additional sprigs of fresh dill for garnish
Instructions
- In a medium bowl, combine cream cheese, smoked salmon, lemon juice, dill, salt, and pepper. Mash together using a fork until well combined.
- Place 1 tablespoon of filling at the end of each slice of cucumber. Add a few capers and roll up tightly. Secure with a toothpick if necessary (many of them just stick together well on their own).
- Garnish with a small piece of dill and another caper.

Really anything with fish should only be made a day ahead, at most. Keep in mind that the minute you add something salty to cucumber, it’s going to start releasing liquid.
