These tangy sweet Key Lime Scones are my latest offering to all my fellow scone lovers out there.

I am the self appointed queen of keto scones. I guarantee you that I’ve got more low carb scone recipes than any other recipe creator out there. Mind you’ve I’ve been doing this for 11 year so I have a bit of a head start!

Key limes vs. Persian limes
I’m always on the hunt for new flavor ideas for these sweet biscuit-like baked goods. And citrus and scones go so well together. So why not go full on tropical and add some key lime zest and juice?
I love those little tiny key limes. They’re so cute and tart, and slightly less acidic than the standard Persian limes.
But if you’ve ever tried to work with them, you know that they are a pain in the butt to squeeze. They’re so small that you only get a few teaspoons of juice out of each one. So baking with them takes a bit of patience.
If you want to make these scones with regular limes, that’s completely acceptable! You can also purchase pre-squeezed key lime juice.
How to make Key Lime Scones
The base of this recipe is very similar to my Keto Cranberry Orange Scones, which results in a truly tender consistency. Here are my best tips for getting it right.
The flours
I use a combination of almond and coconut flour here. It’s one I’ve used frequently as I feel it gives the best texture that most resembles classic scones.
The sweetener
I recommend an erythritol based sweetener such as Swerve, as other sweeteners like allulose will make your scones too soft. You can do that if you wish but you’ve been warned!
Chilled butter
Cutting in chilled butter helps give keto scones a slightly more crumbly texture. Conventional scones use the same method and it works for these as well.
Lime zest
Whether you are using key limes or standard limes, do not skip the zest! It boosts the lime flavor tremendously.
Offset spatula
I cannot recommend one of these little kitchen gadgets enough. They are invaluable to me! I have a kitchen full of expensive equipment and this may be the tool I reach for the most. It’s ideal for spreading frosting but also for wiggling under fragile unbaked scones.
Silicone mats
I also recommend silicone baking mats for protecting the bottoms of your keto baked goods. Parchment paper is a decent alternative but the mats are so useful and help reduce kitchen waste.

Keto Key Lime Scones
Ingredients
Scones
- 1 ½ cups almond flour
- ⅓ cup granulated Swerve Sweetener
- ¼ cup coconut flour
- 2 teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup butter, chilled and cut into small pieces
- 1 large egg
- 2 teaspoon key lime zest
- 3 tablespoon key lime juice
- ½ teaspoon vanilla extract
Glaze
- ¼ cup powdered Swerve Sweetener
- 1 to 2 tablespoon key lime juice
Instructions
Scones
- Preheat the oven to 325F and line a large baking sheet with a silicone mat. Lightly grease the baking mat.
- In a large bowl, whisk together the almond flour, sweetener, coconut flour, baking powder, and salt. Using a pastry cutter or two sharp knives, cut in the butter until the mixture resembles coarse crumbs.
- Stir in the egg, lime zest, lime juice, and vanilla extract until thoroughly combined.
- Turn the dough out onto the prepared baking sheet and pat into a 7-inch circle. Use a very sharp knife to cut into 8 wedges, cutting straight down, rather than dragging the knife through the dough.
- Wiggle under each wedge with a knife or offset spatula, and spread the scones around the baking sheet. Bake 18 to 22 minutes, until the edges are golden brown and the tops are firm to the touch.
- Remove and let cool completely on the pan.
Glaze
- In a small bowl, whisk together the powdered sweetener and enough lime juice to create a drizzling consistency. Drizzle over the cooled scones.

This is a very good recipe . I wanted coconut lime so I added coconut extract and a 1/4 cup of unsweetened shredded coconut. These came a delicious.

I thought I ruined these. I was making these and your Key lime pound cake . I had both recipes out at the same time. I ended up putting 1/2 cup of butter in the scones. They just spread out a little bit. They really taste good. So I found out you can’t mess it up.
