Hey keto friends, we are stepping way, way back in time to one of my earliest recipes for keto roasted nuts. These Buffalo Spiced nuts were one of my favorite keto snacks back in the early days. But it’s been a while so I decided to revisit the recipe, give it a little update, and take pretty new photos too.
Nuts are a staple in our house, as they are in many keto and low carb households. They are an easy nutrient rich snack, and it’s easy to grab a handful when the snack attack hits. Depending on the nuts you choose, they can be as low carb as 4g per serving (¼ cup), with plenty of healthy fats to fill you up.
But let’s be honest, plain roasted nuts can get a little boring sometimes. So adding interesting flavors is the key to keeping things interesting. Different herbs and spices can take keto nut snacks to a whole new level.
Be careful, though! Many store-bought roasted spiced nuts have added sugars and things like maltodextrin. Making your own at home is a much better way to be sure of what’s in your keto snacks.
Is Buffalo Sauce Keto?
Buffalo sauce is kind of a thing with food bloggers. They like to add it to all sorts of recipes beyond the basic chicken wings. I seem to have caught that bug early on. It doesn’t hurt that Buffalo wings became my son’s all time favorite food for a while there.
So we always have a bottle of Frank’s Original RedHot Sauce in our cupboard. This is what the classic Buffalo wings are made with and you really can’t beat it for flavor. And it’s definitely keto friendly, with zero carbs per serving. To make classic wings, you simply mix it with melted butter and toss the wings.
Mind you, not all “Buffalo sauce” is created equal. There are a number of bottled sauces that bill themselves at Buffalo sauce, that have a ton of additives and sometimes even sugar. These are not your best choice for a healthy keto diet.
But as long as you stick with the original Frank’s and butter, it’s most certainly a good keto option.
Remaking Buffalo Roasted Nuts
My son appears to have inherited love for Buffalo wings from his father. My husband loves almost anything Buffalo flavored.
He loves Buffalo wings, of course, but also pizzas, sandwiches and and all manner of snacks like chips and pretzels. He used to eat a lot more of these things but these days I manage to convince him to skip these junky foods more often than not.
Still, I like to indulge my man and come up with healthier keto versions of his old favorites. And what better crunchy snack to make for him than some Buffalo Spiced Nuts?
In my original recipe, I used a combination of almonds, pecans, and cashews. But cashews actually have quite a few carbs compared to other nuts, so this time, I swapped them out for heart healthy walnuts. I actually expected the walnuts to be a little bitter in this mix but they were fabulous.
I’d forgotten how much I like this recipe. It’s a keeper!
How to make Buffalo Spiced Nuts
This recipe is so easy, you can whip them up in no time! A few tips for getting this recipe right:
- Line a rimmed baking sheet with parchment for easy clean up. Trust me, you’ll thank me later when you’re not scrubbing your baking pan.
- Make sure your Buffalo sauce isn’t cold out of the fridge, if you store it there. Otherwise the melted butter clumps up as you mix everything together.
- Watch the nuts carefully as they bake. It’s very easy to burn roasted nuts, so stay by your kitchen and check on them frequently. Give them a stir every few minutes as well.
- Let them cool completely before chowing down. Trust me, it will keep you from burning your tongue. It also allows the nuts to crisp up more as they cool.
- Give them a taste and add more salt to your liking. Salt is always a matter of personal preference, and I like a lot of salt!
How to store keto roasted nuts
These are a great make ahead snack and they store well for up to two weeks. Roasting does change the oils in nuts so you don’t want to keep them around any longer.
Store in an airtight container in a cool, dry place. I like to store mine in glass mason jars with the lids sealed tight. I simply keep them on my kitchen counter if I know we will be snacking on them a lot. They’re usually gone within a few days.

Buffalo Roasted Nuts
Ingredients
- ⅔ cup raw almonds
- ⅔ cup raw pecans
- ⅔ cup raw walnuts
- 3 tablespoon Frank's Hot Sauce
- 2 tablespoon butter melted
- ¾ teaspoon salt (more to taste)
- ½ to 1 teaspoon cayenne
- ½ teaspoon garlic powder
Instructions
- Preheat the oven to 350F and line a rimmed baking sheet with parchment paper.
- In a large bowl, mix all of the ingredients together, tossing to coat well. Spread out in a single layer on the prepared baking sheet.
- Bake 8 to 12 minutes, stirring occasionally, until the nuts are just beginning to brown. Remove and let cool completely.
- Add additional salt to taste.
