    Chipotle Lime Chicken is the perfect low carb, gluten-free grilled chicken dinner! Grilling season is here, so get out and grill up some southwest flavor with this Chipotle Lime Chicken recipe.

    I don’t have much to say about this chipotle lime chicken recipe except that grilling season is finally here and I for one could not be happier. Being able to take the cover off the grill and fire it up again after a long winter makes me all sorts of giddy.

    This year, our grill was covered by several feet of snow for the majority of the winter months and we couldn’t have got at it even if we wanted to. A sad, lonely hump-backed creature it was, covered in its icy white blanket on our patio, hibernating like a bear in its cave. Just waiting for the first breath of spring to shake off it’s cover and come back to life. And come back to life it certainly did. We welcomed it back with open arms and have been putting it to good use since mid-April.

    Flavorful Grilling Recipes

    Food just tastes better when it’s cooked on a grill.  Oven-broiling is all very well when you don’t have a choice, but nothing beats a grill for bringing out the flavours of the meat or the veggies. That little bit of charring around the edges, that smokiness, it just can’t be beat.  I am particularly fond of grilled eggplant, I can’t seem to get enough.  I swear I’ve already grilled a dozen eggplants this season and we’re only part way through May.  And I highly recommend slices of grilled eggplant in place of a burger bun!

    I also love grilled asparagus. Cupcakes and Kale Chips has a recipe for grilled asparagus with lemon and Manchego cheese that looks amazing! And of course, nothing beats the taste of grilled meats. It goes way beyond grilled burgers or steaks. There’s a recipe for grilled lamb chops that I can’t wait to try!

    Investing in a good gas grill was one of the best decisions I ever made. I did my research and bought my husband a Weber for Father’s Day a few years ago. I had recently become a stay at home mum and I worried that we couldn’t really afford it, but our smaller charcoal Weber wasn’t very useful for our growing family.  It took a lot of time and effort to get going and we had to plan a grilling event well in advance. At first I thought I would get a less expensive gas grill, because there are plenty on the market. But reading the reviews convinced me that it was worth putting my frugality aside and getting a solidly built grill that would last more than a season. We’ve definitely gotten our money’s worth out of that thing.

    Low Carb Chipotle Lime Grilled Chicken

    I also love grilling out because it helps keep my kitchen clean. The food often doesn’t need a lot of advance prep; a little salt and pepper and away you go. But sometimes you want to enhance the flavours of the grill with a little marinade, especially with chicken.

    Chipotle Lime Chicken Marinade

    This Chipotle Lime marinade is one I just threw together and let it meld into the chicken for a few hours.  It was easy and fresh, and had a nice kick without being overly spicy.  Happy Grilling!

    Chipotle Lime Grilled Chicken – Low Carb and Gluten-Free

    Grilling season is here, so get out and grill with this delicious and easy Chipotle Lime Chicken recipe.

    Servings: 6 servings

    Ingredients

    • ¼ cup avocado oil
    • ¼ cup fresh lime juice
    • 2 cloves garlic minced
    • 1 tablespoon freshly grated lime zest
    • 1 tablespoon honey or xylitol honey
    • 1 tablespoon ground cumin
    • 1 tablespoon chipotle powder
    • ½ teaspoon kosher salt
    • ¼ teaspoon black pepper
    • 3 lbs bone-in skin-on chicken parts (drumsticks, thighs or breasts)

    Instructions

    • In a large glass baking dish, combine oil, lime juice, garlic, honey, cumin, chipotle powder, salt and pepper. Stir to combine.
    • Pat chicken dry with paper towel, then add to baking dish and turn to coat. Let marinate in fridge for 2 or 3 hours, turning occasionally.
    • Preheat grill to medium heat. Place chicken on grill, skin-side down and place cover on grill (should be well ventilated). Cook for 8 to 10 minutes, or until skin is golden and crisp.
    • Turn chicken over and cook for 5 more minutes, then check for doneness. Insert an instant read thermometer into thickest part of chicken without touching bone.
    • Fully cooked chicken should reach 165F. If not, cook 3 to 5 minutes more, until done.

    Notes

    Serves 6. Each serving has 3.5 g of carbs.

        Well, clearly I disagree because I found these wonderfully flavourful. You can always increase the chipotle if you want more heat. But to each his own.

      Agreed!! Actually, my grilling season is all year, but I’ve been turning to the grill even more frequently of late. Actually, my oven is in the dying phase, and yesterday I even made granola on the grill!! One day I’m actually going to attempt to bake… or hopefully we will see fit to find a new oven before I resort to that!
      In any case, this chicken has my name all over it! I’m all about lime and chipotle, and combining that with the grill and maybe some grilled corn is just about pure perfection!!

      Sounds yummy! I enjoy grilling veggies too. I do not believe I have tried eggplant as my standbys are red peppers and zucchini as well as portabello mushrooms. OK I am officially hungry.

      Yum! I love grilled egpplant, too — in fact I just sliced and grilled three of them yesterday. I grill red peppers and zucchini, too, and layer all three veggies on a platter with a lemon vinaigrette. Delicious and easy.

        It’s the honey (16g per tablespoon). You can use xylitol honey if you want. But each serving is 2 pieces of chicken so it’s a good sized serving!
